    1-8oz cream cheese (softened), 1 cup butter (softened),2tsp xanthan gum, 2 cups GF flour, (to make flour mix; I use 2 cups rice flour, 2/3 cup potatoe starch flour, 1/3 cup tapioca flour--combined) Cream together the cream cheese and butter until well blended. Add flour mix and xanthan gum and mix. Chill. FILLING: 2 eggs. 2 Tbs vanilla, 1 1/2 cups brown sugar, 1 1/2 cups chopped pecans mixed together. Roll dough into 48 equal balls. Press into tassie pans. Fill. Bake at 325 degrees for 30 min.
