It all sounds so good, tarts could be done the week before. The cut out cakes sound nice, too. I am trying to achieve visual appeal if I can.

A veggie pizza is usually a hit with women. Use a cresant type crust or whatever you wany, rolled out on a baking sheet. Bake, cool, spread with a cream cheese/ mayo type mixture and then add all the chopped, freh veggies you want/ Yum yum...

Default recipe

Chocolate Orange Balls--1 9oz. box of vanilla wafers,
2 1/4 cups confectioner's sugar (powered sugar)
1/4 unsweetened cocoa powder
1/3 cup orange juice concentrate
1/4 cup corn syrup
1 1/2 cup nuts (almonds, hazel nuts or pecans work best)
Combine wafers, 2 cups powered sugar, cocoa powder, oj and corn syrup in food processor. Blend until cookies are ground to crumbs and evenly blended. If mixture too dry add a few drops of water and blend. Add nuts and blend.
Form into 1 inch balls, roll balls in 1/4 cup powder sugar to coat. Store in fridge in a airtight container up to one month.

I put these balls into a small foil or paper cup to look fancy.

Individual spanikoptias (spinach & cheese) pies are always a hit and much easier to make than you think. While you have the phyllo dough out you could also make some somoas with mango chutney. My family love both and there are many recipes online.
