We got this recipe 40+ years ago from a friend named Jenny, so my kids always called it Jenny's salad... later shortened to Jenny Salad

1 container cottage cheese (16 oz)
1 container cool whip (9 oz)
1 can* mandarin oranges, well drained
1 can* pineapple chunks, well drained
1 large pkg orange flavored Jello, pour right from packet, dry**
Mix all ingredients in large bowl. Refrigerate for 1–2 hours.

You can alter with different fruit (even fresh) combinations and Jello flavor.

    * Size of fruit cans depend upon how much fruit you want.

**Use either regular Jello or no-sugar Jello, and you can adjust amount of Jello according to taste.
Can be a side dish or dessert.

This so good. I use sugar-free Jello. Also taste good without pineapple.

I'm going to try it! Going to Phoenix to see FIL this weekend, may try it there - more people to eat it! :-D

I make this recipe. The only difference is I strain my cottage cheese. It makes it very thick and creamy. I also mix the cool whip and jello together first. It makes it mix together faster. Ohhh... Only think I'm missing in the cool whip. I think I will have to make some!

We also make this for just about all family get together dinners.
We use crushed pineapples, and that is where I put my jello. Seems to make it a little stiffer when it's chilled.
We add fruit to match the color/flavor jello we're using. Cherries with cherry flavored jello....mandarine oranges in orange flavored jello, etc. Pineapples go in no matter what color/flavor we make.
No matter what color/flavor we make, we call it 'the pink stuff'. We love it!

Love to make it with Lime Jello and we call it the "pink stuff" no matter what color or flavor also. Thanks for reminding me, love it in the summer!

This is my favourite jello salad. I use 2 cans on oranges though. It is also good with lime or lemon jello.
