Key Lime Pie

Hi Dianne tis is the recipe I use all the time any everyone loves it.
Key Lime Pie
3 large egg yolks
1/2 cup Key lime juice
pinch of salt
1/4 teaspoon Vanilla
1 (14oz)can sweetened condensed Milk
1 (9") graham cracker crust
Whisk egg yolk until blended, whisk in Key lime juice, add the sweetened Cond milk, vanilla and salt, whisking till well blended. Pour mixture into pie shell. Bake at 375 degree oven for 15 min. Remove from oven; cool completely on wire rack. Chill until ready to serve. Garnish with a dollop of whip cream and a thinly sliced Key lime.
Note: For pies with more filling tripple the filling ingredients and devide evenly between 2 graham craker crusts. Hope you enjoy this as much as we do.

I use fresh squeezed key limes all the time, and never have used the bottled juice but the recipe can use either they say no dfference in taste. I get my key limes for free so no need to buy the bottled. As far as I know regular limes are less tart than key limes and a different color as well, no reason you culdn't use regular limes the pie will have a little different taste but still yummy.

I love key lime pie in the summer when I hate to start the oven so I do this: Add a can of sweetened condensed milk to an 8oz. package of softened cream cheese. Then blend in the lime juice. To lighten that up a bit, you can also add some coolwhip--or not. Pour into the graham cracker crust and let it set up in the refrig. Yumm!
