Default knobby apple cake

I am making this now and it smells so good, I have to share the recipe!

2 T. butter
1 egg
3/4 c. sugar
1 t. vanilla -- cream these together.

Sift together
1/2 c. flour
1/2 t. each - cinnamon, nutmeg, salt, baking soda
1 t. baking powder

2.5 - 3 cups diced apples
1/2 c. chopped walnuts.

Add dry ingredients to wet, stir well, stir in apples and nuts. This will take a while, this cake is mostly apples!
Bake in an 8" x 8" square pan, greased, 350 degrees, 45 minutes.

I am trying it with oil instead of butter this time, I also mix in some healthy things like wheat germ and ground flax seed. It's a fairly forgiving recipe.

Came out great with oil instead of butter, a bit less sugar and some raisins.

Noticed a bag of sliced in apples in freezer so getting them out now ! I’m in the mood for something like this !

Oooohhh...sounds good! I do love butter. It's a serious weakness of mine. However, oil is good too...I think...maybe.

I made a second batch as muffins, cooking time about 25 minutes, because I needed a snack when I am on the road. Made 12 muffins exactly.

Mine seemed burned. What did I do wrong? I always follow a recipe exactly the first time. Next time, I think I'll switch to brown sugar and lower the temp. It was good, especially with vanilla ice cream underneath!

Thank you. I am trying this recipe. Maybe i will add a dash of powdered ginger or the five spice blend.

It does come out very dark brown.
