Default Looking For An Apple Cake Recipe

Howdy y'all. :c)

My mother used to make an apple cake that was the bomb! I've searched online for the recipe, but haven't found one that seems right. It had grated apples, coconut, black walnuts, and raisins in it. She always frosted it with the coconut frosting you would use on a German chocolate cake. Does this sound familiar to anyone? Please help if you can. I'd sure appreciate it! :c)

APPLE CAKE
(from the out of print Keepsake Quilting Cookbook published as charitable fundraiser in 2001.
This is delicious!!!

INGREDIENTS
4 Winesap or McIntosh apples
2/3 cups sugar
1 teaspoon cinnamon

2 cups sugar
1/4 cup orange juice
1 cup vegetable oil

2-1/2 teaspoons vanilla
4 eggs, beaten
3 cups flour
1 Tablespoon baking powder
1/8 teaspoon salt

DIRECTIONS:
Peel, core and slice apples and set aside.
Mix 2/3 cup sugar and 1 teaspoon cinnamon together in small bowl... set aside.
Combine 2 cups sugar, orange, juice, oil, vanilla and eggs in mixing bowl, and stir until well mixed.
Mix flour, baking powder and salt together. Add to egg mixture and mix well.
Pour 1/2 the batter into a greased tube or bunt pan.
Add a layer of 1/2 the apples, and sprinkle with 1/2 the cinnamon-sugar mix.
Repeat the layers.
Bake at 350 degrees for 1-1/4 to 1-1/2 hours or until the cake tests down.
Cool in the pan on a wire rack for 10 minutes. Invert the cake onto serving plate.
Yields 12 to 16 servings.

Have you tried cooks.com? Here is one from them. I just searched "apple coconut cake" on their web site. Don't know about the frosting. This one has the grated apples, but, it doesn't call for raisins. Good Luck!

APPLE-COCONUT CAKE

2 c. unpeeled grated apples
1 1/2 c. flour
1 tsp. soda
1/4 tsp. salt
1/2 c. cooking oil
1 egg, beaten
1 tsp. vanilla
1/2 c. nuts
1/2 c. coconut


Pour sugar over apples; let stand until juice is formed. Combine flour, soda and salt. Add oil, egg, vanilla, nuts, coconut and apples. Mix well and pour in 9"x9" pan. Bake at 350 degrees for 45 to 50 minutes. May be served with glaze or with ice cream. Yield: 9 servings.

I just made this cake yesterday. Haven't baked in awhile, but my husband was in the mood for the apple cake. I add more apples. I used about 8 apples which is about 10 cups. This is a moist cake.

Default Apple bread or muffins

APPLE BREAD OR MUFFINS

3/4 cup salad oil
3 eggs, beaten
2 cups sugar
3 cups flour
1/2 tsp salt
1 cup chopped nuts ( I use walnuts)
1 tsp. baking soda
1 Tbsp. vanilla
2 cups chopped apples


Mix with spoon. Bake in a greased tube pan for 60-90 minutes at 350 degrees.
OR
Makes 12 Texas sized muffins---bake for 30-45 minutes at 350 degrees.

The great thing about this recipe is that you don't even have to get the mixer dirty and you can use apples that are getting old and no one will eat anymore. (Sorry guys,,,but that is what I use).

THESE ARE DELICIOUS!!!!!

APPLE NUT BREAD

1/4 cup shortening
2/3 cup sugar
2 beaten eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon soda
2 cups green apples, peeled and grated
approximately 3 apples
1 tablespoon lemon rind
2/3 cups walnuts

Cream the shortening and sugar together; add beaten eggs. Mix in dry ingredients; fold in apples, lemon rind, and walnuts. Bake 350 oven 45-50 minutes.

made with gluten free flour (i have celiac disease); canola oil; 6 delicious apples; 1 1/2c. sugar; mixed apples/sugar & cinnamon together; used 9 x 13 pan; one layer batter, middle apples, one layer batter. baked 1 hr. DELICIOUS!

This was my mother-in-law's recipe. I've made this often -- it is sooooo moist!!

2 cups flour 2 teaspoons cinnamon
2 cups sugar 1/2 teaspoon salt
4 eggs, at room temperature 1 teaspoon baking powder
3 cups peeled, cored, grated apples 2 teaspoons baking soda
1 teaspoon vanilla
1-1/2 cups corn oil

Mix all dry ingredients; add apples. Add oil and vanilla. Blend well. Pour batter into a tube or bundt pan. Bake at 350 degrees for 50 minutes or until a toothpick comes out clean. Cool completely.

FROSTING

1 stick butter 1 box (pound) powdered sugar
1 8-ounvce cream cheese, at room temp 1 cup chopped pecans
1 teaspoon vanilla

Cream cheese and butter; add vanilla, sugar, and pecans. This very generously ices the cake. I have also made this in a 9 x 13 inch pan adjusting cooking time. Great birthday cake!

ok i am a cheater when it comes to the apple cake ....dhines makes a carmel cake nix that is the bomb when you put apples in it and cream cheese frosting
