Looking for Lemon Meringue Pie recipe

My boyfriend's favorite pie is lemon meringue, but all I can make are pumpkin and apple. Next week I'm going with a couple other friends to go to another friend's house about three hours away (he and his wife moved five months ago) for his birthday. We decided that since we're all going to be there for most of the week we could have an early Thanksgiving together while we're there. So I decided to try and test out a lemon meringue recipe in addition to making my delicious pumpkin pie recipe. But I can't seem to find a straight up traditional lemon meringue recipe. Anyone got the recipe I'm looking for?

Here is the one I use
1 1/2 C sugar
3 Tab cornstarch
3 Tab flour
dash salt
1 1/2 hot cups water
........................
3 slightlt beaten egg yolks
2 T butter or margerine
1/3 cup lemon juice
1 9 in baked pastry shell
.............................
3 egg whites for meringue

mix first 4 ingredients adding hot water slowly stiring constantly bring to a boil reduce heat and cook 3 min. remove from heat mix a little of the hot mixture in with egg yolks add to 1st mixture and bring back to boil for two more min. add butter and lemon juice mixing well. pour into pastry shell.

Meringue: 3 egg whites
1/2 tsp vanilla
1/4 tsp cream of tarter
6 Tab. sugar
beat till soft peaks form slowly adding in the sugar spread over hot pie filling bake at 350 for 12 to 15 min. Cool!!

Now how do you pre-bake your pie shell?

I pick it all over with a fork and bake at 450 for 10 to 13 min until it starts to turn a golden brown.

Ah ok! Don't see why I didn't realize that before because I practically do the same thing for my pumpkin pie.

If you want to make a really good lemon meringue pie, use fresh lemons for the juice :wink:
