    Default Mushroom Kit Harvest

    My son gave me an Oyster Mushroom kit for Christmas. I followed the instructions carefully and waited, and waited, and waited...alas, no mushrooms. I put it outside on the patio table and splashed some water on it from time to time, but still, it didn't do a thing. But yesterday, I walked by the kit and noticed that it was sitting cock-eyed and the plastic bag that covered it was bulging. Yes!!! Mushrooms!!! After all this time!!! There were two mushrooms and one was wayyyy bigger than my hand. We chopped them up, along with some shrimp, for an omelet this morning. So worth the wait!

    Now I'm optimistic. I have another mushroom kit that has yet to produce. Maybe I'll have more mushrooms. Geesh! I'd love to hear about some excellent mushroom recipes.

    It doesn't show off mushrooms all that well, but I make this filling pretty often for my son:

    Basically, it's any mushrooms. I typically buy pre-sliced ones on markdown. Any onion. Lots of red pepper.

    Turns out frozen Pepperidge Farms Puff Pastry is Vegan! Makes an excellent hot pocket. Also a good filling for tamales or dumplings or humbao.

    Oh, that’s amazing! I had no idea they took so long! I am hoping to find some morels around here soon. I love to sauté them with onion and asparagus (we have that growing in our pasture) and make a creamed soup from that. So delicious!

    Thanks Iceblossom. I'll have to buy some puff pastry next time I go shopping, so that I can try this.

    Morels...they are my favorite mushroom. They're so earthy and rich tasting. I love all of the little "pockets" in them that hold the sauce.
