I serve this with grilled salmon

1 tablespoon of salt
6 ounces of carrots, peeled and cut diagonally into 1 inch long pieces
6 ounces of fresh green beans, trimmed and cut into 1 inch pieces
6 ounces of sugar snap peas
6 ounces of asparagus tough ends trimmed, cut in 1 inch pieces
8 ounces of cherry tomatoes cut in half
2 tablespoons of olive oil
1 small red onion cut into small wedges
1/8 teaspoon of fresh pepper
1/2 cup of fresh basil leaves, chopped

bring a large pot of water to a boil and add 1 tablespoon of salt and the carrots, cook about 2 minutes.
add the beans, asparagus and the sugar snap peas and cook about 2 minutes. Do not over cook, they need to be crisp.
Drain the veggies and put in a ice water bath to cool and drain again.
Heat the oik in a large skillet over low heart. Add onions, cook until translucent about 3-4 minutes, stirring occasionally. Add blanced veggies, the tomatoes and 1/2 teaspoon of salt and the peppers. Raise the heat to medium high and cook, stirring occasionally , until tender..about 5 minutes.
Remove from the heat and add basil..toss to combine.
Enjoy..very tasty

Thanks so much for this great recipe! I'm a vegetarian and ALWAYS on the look out for terrific recipes without meat products. Awesome!
