Pancakes
Kids can do this.
Pour into a clean glass quart jar with a lid:
1 cup milk
1 egg
2 Tblsp oil
Add
1 cup all purpose flour
2 Tblsp sugar
1 tsp. Baking powder
1/4 tsp salt
Put cover on tightly and shake for 2 minutes ( Yes, 2 minutes). It’s okay if there’s small lumps
Let jar sit 10 minutes ( to do this so baking powder activates )
Preheat pan & 1 Tblsp oil for frying pancakes. Turn once when browned underneath.
***I add a bit more milk because we want thinner pancake batter

Sounds similar to the ones my sister makes. We freeze them too and they come out just as good nuked afterwards. I made up a batch just before my rotor cuff surgery so I'd have some to pull out the freezer during my recovery period.
