I just have a taste for something.... not that I need to eat this. And I probably will polish it off too. :roll: I'm looking for something from scratch, so no cake mixes in the ingredient list! And it doesn't have to be cobbler or crisp, but something different from pie or cake or bread.....

Pumpkin Pie Squares
1 cup sifted flour 1/2 cup quick-cooking rolled oats 1/2 cup brown sugar, firmly packed 1/2 cup butter 1 (lb) can pumpkin (2 cups) 1 (13 1/2 oz) can evaporated milk 2 eggs 3/4 cup sugar 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground cloves 1/2 cup chopped pecans 1/2 cup brown sugar, firmly packed 2 tbsp butter Combine flour, rolled oats, 1/2 cup brown sugar and 1/2 cup butter in mixing bowl. Mix until crumbly, using electric mixer on low speed. Press into ungreased pan (13x9x2). Bake at 350 for 15 mins. Combine pumpkin, evaporated milk, eggs, sugar, salt and spices in mixing bowl, beat well. Pour into crust. Bake at 350, 20 mins. Combine pecans 1/2 cup brown sugar and 2 tbsp butter, sprinkle over pumpkin filling. Return to oven and bake 15 to 20 mins or until filling is set. Cool in pan and cut in 2" squares. Makes 2 doz. |

Well. I had to defer to my 6yo son. On our way home tonight he announced that he wanted to "make something". The recipe was "a secret" (meaning he didn't know yet ;)) but that it included chocolate. So with a little guidance, but no recipe, he actually created some really good chocolate cookies!! He named them his "Huny Choklit Cookys" I'm so impressed and proud. They seriously turned out really good. Having him help me cook seems to be paying off!
However, I still want my pumpkin pie squares. Tomorrow is MY turn. I hope I don't have to start fighting for kitchen time.... ;) |
Here's a family favourite
Deep Dish Pumpkin Pie Crust 1 3/4 C flour 1/3 C brown sugar 1/3 C sugar 1 C cold margarine/or butter Combine sugars and flour. Cut in margarine as you would for pastry. Reserve 1 C of crumb mixture. With remaining, press firmly into the bottom and sides of a glass lasagna size baking dish. Filling Combine 2 C canned pumpkin ( real pumpkin, not pumpkin pie filling) 1 small can of sweetened condensed milk ( Eagle Brand) 2 eggs 1 tsp. cinnamon 1/2 tsp.allspice 1/2 tsp. salt Pour into pan over bottom crust. Top with reserved crumb mixture. Bake at 350 for 50 minutes. Allow to cool. Serve with whipped cream or ice cream. Refrigerate leftovers. |
