I always toss my overall-ripe bananas in the freezer. The peel turns black, but not the insides. This way I always have ripe bananas to make bread with. When you want to use them, just take them out of the freezer 30 minutes or so ahead of mixing your batter.

Better yet, peel them first and put in a ziploc bag in the freezer. I have tried to peel a frozen banana and it is not fun.

This is Granny's banana bread. She taught it to my daughter when she was a very little girl. That started her love for baking.
3 bananas, 1.5 cup self rising flour, 1 cup sugar, 1 egg, half stick butter. Mix together, 350 for 55 min. I add nuts. I also omit one banana and add a jar of fig preserves and gloves, nutmeg and a spoon of honey. Really good spice bread.

You are organized! Mine would get frostbit and tossed in the end.
