We have an overabundance of beets this year. One can only use so many pickled beets, and harvard beets do not appeal. What do you do with beets?

I like them just as simple, boiled beets .... of course, with butter and salt/pepper! You can freeze them, to reheat later.

And for me, you can't have too many pickled beets!

If you have way too much donate them to the local food banks or senior centers.
I personally don't eat beets to me they taste like dirt sorry. I did make a salad last night and put beet slices on my salad.

You can never have to many pickled beets. I love them. I will open a jar get a fork and eat them like candy. The whole jar. YUMMMMMY!!!

I agree! I love them pickled in a jar with cucumbers! YUMMY!!

What would I do with them? I would not plant them in the first place, I don't like beets in any shape or form.

I have seen a recipe for a chocolate cake with grated beets. You can make grated beets and a bit of horseradish to serve with ham or pork. There is beet soup, borsch (sp)

I use them to make chocolate beet cake. No flavor of beets, but so moist, you won't believe it! There are lots of recipes out there and I've tried several.

Love just plain ol' beets cooked, peeled and eat with lots of butter. Then, there is no such thing as too many pickled beets, I can eat them in preference to candy. Have you looked in the produce dept. and seen how much they want for thre or four pitiful beets? Oh, my, makes me want to cry.

Yrs ago made a beet Jelly, yes you heard me right and it was down right good. But it was so many yrs ago I don't remember how I did it. Has a nice taste and color is great.

I love, love, LOVE beets. My favorite is a cold beet salad. Start out by removing the greens and the little root stems, then scrub the beets and wrap in tin foil. Bake until easily pierced with fork, then cool. While the beets are baking, put 1 cup of olive oil in a small pan. Add 1 cup of slivered almonds and heat the oil gently, until the almonds just turn a golden brown. Drain off the oil (but keep it - makes awesome dressings)and set the almonds aside. Peel and cube the cooled beets and put into a bowl. Make a light vinegrette (oil, vinegar, lemon or lime juice, minced shallots - whatever light vinegrette recipe you like) and mix with the cubed beets. When ready to serve crumble goat cheese or blue cheese over the beets, sprinkle with the almonds and enjoy. When I don't have almonds I have used salted sunflower seeds - almost as good and much easier!!

If you have a juicer, there are several recipes that call for them. Good with carrots and apples and celery!

Curious? does it get a "red" look, as in red velvet cake?

And it takes a lot of beets .... bet you could puree the beets, then freeze in recipe size portions, ready for when you wanted to make the cake!

And another idea .... roasted beets!

I do a mixture of veggies (whatever I have at the time ... potatoes, onions, carrots, celery, sweet potatoes, parsnips, and/or beets) with seasonings. Roast in a flat pan in the oven. I keep the beets in a corner by themselves to minimize the staining, but at serving time, then toss them all together .

The little bit of staining at that point is good ... puts a rosey glow on the whole mixture. And oh so delicious!

My sister made jelly with some of her beets - that tasted gooooood. She used raspberry jello in the recipe and I thought it was raspberry jelly!

I'm totally curious!!!
and have some beets that I could possibly make it.

And as aske before is it like jello? or the jam type of jelly?

Guess it's kind of like the tomato jam/jelly that some make. It is strawberry-like.

I cook them in the skins until tender, peel, slice, and place in freezer bags. Pop them in the freezer until you need them. So simple to heat up in the microwave. I love beets, and we can't seem to grow them.

I just got back from upstate new york. I brought back 2 bushels of beets and canned them. I also made a choc beet bundt cake,the recipe is from allrecipes.com. I love this cake as does anyone who I give it to. I shred extra beets and put in baggies,2c.at a time. then all year I can make this cake. I also make the beet jelly and it never is enough for my friends. I make raspberry-beet jelly, cherry beet jelly, blueberry beet jelly. This year I saved 1 gallon of the beet juice for my jelly which I will make at a later date. The past 2 weeks, I have canned,beets,beets with onions,tomatoes with hot peppers,tomatoes with chili seasoning,apple pie filling,chow,chow- pickle relish,sweet and hot sliced peppers for sub sandwiches. and made 4 batches of hot pepper jelly. I also got a bushel of georgia peaches dropped at my back door and have made peach jam for the last 2 days. I sell these, I have many people who just love home canned things. I hope you have good luck with your beet abundance. PS,in georgia, beets don't grow well so I always go north for mine.

Pineapple Beets
2tablespoons brown sugar
1Tablespoon cornstarch
1can unsweetened pineapple tidbits undrained
1can sliced beets drained
1Tablespoon lemon juice
1 teaspoon margarine
in sauce pan combine brown sugar,cornstarch and pineapple,bring to a boil stirring constantly until thick,about 2 min add the drained beets,lemon juice,and margarine,cook over medium heat 5 min stirring occasionally

I agree, one can never have too many pickled beets. If I have jars from last year, I give them away. I also eat them right out of the jar for a snack....satisfies my sweet tooth. Great idea to give to a food pantry or tell all of your friends to come and get them. Wish you lived near me. I have to buy them since I can't do a garden any more.

BTW I love the beet tops (greens) as much as the beets. Steam like spinach, drain and sprinkle with a little bit of vinegar. I keep a cruet of vinegar with a few dried chili peppers in it for just this purpose. The peppers just kick-up the flavor & doesn't make it "hot".

Here's an idea for you ... my sister buys them in the winter when they are selling them cheap and does her pickles then. Likewise she'll do pickles with English Cucumbers when on sale.

She still has a huge garden, and preserves lots in the summer though her time is limited with the farm field work being priority! By winter, she's got more time to do the work ... and picks up the bargains.

Try a little farm stand, he may be able to sell them for you, and I agree you can never have to many beets,pickled or plain, LOVE THEM ANY WAY!

You can use pickled beets to make a simple salad
Chop/dice pickled beets
Chop/dice hard boiled eggs
add Mayo/Miracle Whip to moisten
mix all and chill.
makes a great salad if you like beets
