Broccoli-Corn Bake

1/2 cup coarse cracker crumbs plus 1/4 cup
1 Tblsp minced onion
2 Tblsp melted butter plus 1 Tblsp
Dash of salt & pepper.

Combine 1 Tblsp butter with 1/4 cup cracker crumbs and set aside for topping. Mix everything else, pour in greased casserole dish, add cracker topping. Bake uncovered 35-40 minutes at 350. Can be mixed up ahead then baked later.

That looks like a very good recipe and I love all the ingredients. It's one I am going to try one of these days.

1/4 cup of what?

skothing 03-11-2018 02:37 AM

Ha ha ha I see didn't understand

My guess--the 1/4 cup that's not identified goes with the 1 Tbsp of melted butter on down the list

My interpretation is that the "1/4 cup" means an additional 1/4 cup of cracker crumbs which is for the topping. The 1/2 cup of cracker crumbs would be mixed in with the other ingredients.

This is very much like a recipe my DMIL made, but without the broccoli. The broccoli would add nice color and flavor!

I agree with DJ; or 3/4 cup 'divided' into 1/2 cup and 1/4 cup.

I think my recipe is almost identical. Been making it for years, seems to be a hit and a good one for pot luck dinners or large family/friend gathering. Easy to double also.

I copied the recipe to WordPerfect an printed it. It sounds delicious!

Yes, it’s 1/4 cup additional cracker crumbs also 1Tblsp additional butter. Sorry that wasn’t clear.
