Canning Okra with vinegar?
 
Anyone have the recipe for canning okra with vinegar? Not pickled okra! I can remember how it's done but not how much vinegar to add. Thought I would try here before I googled it!

I love fried Okra, my mother came from Southern Miz-zoo-raa. Anyone know beans and toads??

I agree although I am in NC. When my mom was living, we froze okra - by cutting it up, drizzling oil and corn meal over it, and heating in a 200* oven for about 20 minutes (as I recall). It was wonderful fried then in the winter. My mom is not living now, and I've had 3 surgeries in 9 months, so I don't do much freezing / canning now.

I'm from Texas where okra is plentiful, but here in WA it is not popular (people here don't like it) so we can't find it. Next year we will plant it to see if it will grow.

My hubby put vinegar in the okra he canned. He isn't home now or I would ask him how much he put in. I know we rinsed it before we fried it. It was good.

If memory serves me right, my mom use to put about 7 or 8 teaspoons in hers..but its been so long I can't be certain..but boy oh boy where they good come eatin time!!

I'm sorry no help with canning okra, I just love okra. When I was a kid we went to Oklahoma every year at Easter,(my dad was from there) anyway we called okra Oklahoma popcorn. Aunt Bessie would spend a lot of time frying okra and catfish. Wish I was a kid again. I have made okra its just not as good as hers.
