Carmel popcorn - anyone have a good recipe?
 
thought this would be a good snack on Wednesday evening for both little and big people. Know this is the place to get a great recipe. Hope everyone has a blessed Thanksgiving.

I use King Arthur Flour's recipe, which can be found at http://www.kingarthurflour.com/recip...el-corn-recipe except I omit the lemon juice. I love the light shell it makes on the popcorn, just set your oven very low to bake or the caramel will burn a bit. I make a double batch in my roasting pan and eat on it all winter! Enjoy!

ETA: I sub honey for the molasses it calls for because I like the lighter flavored caramel.

My late husband loved this and he fixed it all the time!
1 Cup uncooked popcorn popped
In Bowl Mix:
1 1/2 Cup brown sugar
1 1/2 sticks butter
1/3 Cup Light Karo Syrup
1/2 teaspoon salt
Micro-wave on high 2 1/2 minutes, stir well, Cook 2 1/2 minutes more, add 1/2 teaspoon baking soda, stir well.
Put popped corn in a large brown bag. Pour cooked mixture over.Shake well, close bag, put in micro-wave cook 1 1/2 minutes on high, remove and shake. Cook on high 1 1/2 minutes more, shake again, Cook on high 45 seconds, shake again, cook 30 seconds more. Tear open bag and spread. Be careful, its hot! This is the best carmel corn I ever ate!!!!

It is also good with chocolate drizzled on top when it has cooled. When given as gifts they always say it tastes like Kracker Jacks. I had found out that you can use any recipe for the caramel version but just cook it to 300° and no baking is required.

No bake caramel corn

* 8 cups popped corn

* 1 cup brown sugar

* 1/2 cup butter

* 1/4 cup light corn/pancake syrup(I use Log Cabin)

1 tsp molasses

* 1/4 teaspoon salt

* 1 teaspoon vanilla extract

* 1/2 teaspoon baking soda

Can add peanuts if desired

Pop corn and sort out any leftover kernels, place in very large roaster pan.
On stove mix sugar, butter, syrup and molasses, stir/cook until sugar dissolves and cook to 300°
Add vanilla and baking soda, stir very well (add nuts now if desired)
Pour over popcorn and stir to coat as much corn as possible.
Put out on cookie sheets (2) to cool
Break into chunks and store in zip bags or airtight container.
Enjoy but keep the container closed because it seems to disappear when you are not looking.*Ü*

Could microwave popcorn be used/ And if so would it take one bag or more than one bag?

Not sure, never used micro-wave corn, I just know 1 Cup makes a lot of pop corn.

Thanks for the reminder!! I used to make this!! It is delicious!! I lined up grocery bags on my kitchen floor and we popped corn like crazy!!

Making this in the microwave sounds so easy but is there danger of the paper bag catching fire? I was going to pop corn in a small brown bag but then I read somewhere not to do it. Opinions, please!
