Cheesey Beer Soup
 
Anyone have a good recipe for this soup? Had it in Florida several years ago and obviously it made an lasting impression on me. Thanks.

The best one I have found came on the back of a Sargento Cheese package about 5 years ago. It is titled: Wisconsin Cheddar Cheese Soup. It was one of those recipes that was so good DH said, Lose this recipe, it's too good.

1/4 Cup butter
1/4 cup all purpose flour
2 1/2 cups milk
1 cup beer or water
2 tsps Worchestershire Sauce
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp cayenne pepper
2 cups Sargento sharp shredded cheddar cheese
Garlic or herbed croutons (optional)

Melt butter in large saucepan over medium heat. Add flour;cook until bubbly, stirring constantly. Add milk;heat to a boil over high heat, stirring constantly. Reduce heat, stir in beer, Worcestershire, salt, mustard and cayenne. Simmer 10 minutes. Stir in cheese; cook, stirring constantly, just until cheese melts (do not boil). Ladle into warm soup bowls; serve with croutons. 4 servings.

It also works great as a dip with dip pretzel sticks. When it got too thick, I just diluted with more beer. As you can see it just gets better and better.

I think that's the recipe my Mom used when we couldn't eat meat on Fridays. So yummy!!
