Chicken Salad--Best You Will Have Ever Eaten!!!!
CHICKEN SALAD
2 1/2 Cups cooked chicken, diced--(can use well drained canned chicken) Add 2 tablespoons of lemon juice to cooked chicken. 1 Cup seedless grapes-quartered (I like green & purple for the added color) 1/2 Cup almonds, slivered or chopped 1 Cup salad dressing (Miracle Whip) 1/2 Cup whipping cream (I use the whole 1/2 pint container)--when whipping I add one teaspoon powdered sugar & 1 teaspoon vanilla 2 Tablespoons parsley Flakes--finely crushed 1 Apple--cored & chopped 1/2 Cup sweet relish 1/2 Cup onion--diced (optional) 1/2 Cup celery--diced (optional) Salt & Pepper to taste (I don't use any) Mix all ingredients together adding the whipped cream last. Put in refrigerator and chill. (you can eat this as soon as made, but, I prefer it cold) Serve on bread or I prefer on Ritz Crackers. This makes a large amount so you can share with a friend or neighbor, as I usually do. Hope you enjoy this recipe as much as I do. This is one of my favorite summer time foods. I love chicken salad, and reall like grapes and nuts in it. And since I am a Midwest gal I will definitely use the Miracle Whip! Thanks so much for sharing, I will try this very soon. Besides a sandwich, I like to eat it on the top of a nice lettuce salad or in the middle of a home grown tomato..... oh man, I am getting pretty hungry!!

Would work with tuna or crab, I think. Also, partial to real mayo....love the apple and celery...minced.

I make mine with grapes, raisins, craisins, celery, dill pickle relish, pecans, mayo and sometimes onion. I copied mine after Subway.

Years ago we ate at 'The Machine Shed' in Des Moines, IA by Living History Farms. We enjoyed the meat loaf and cole slaw I teased the waitress about the recipes for them. When leaving the chef came out and gave the the recipes! BUT he said 'do not use Miracle Whip, it is not for you. Just get the cheapest salad dressing you can find. and I needed t o remember the recipes were for 100 people. so I cut it in half and then in half again. They are great. So I will be trying your recipe. need to put in eggs too |

A sandwich shop here uses cashews and I prefer them over almonds in this salad.

This recipe is very similar to mine, and I do use Duke's Mayo in my chicken salad. But I have recipes that I do use Miracle Whip in and they fit the salad. Miracle Whip is a 'salad' dressing, it's not a mayonnaise brand name. It is similar to what you get when you take a mayonnaise and put additives in it, such as sugar, mustard, sweet pickle juice, lemon juices, etc. I love chicken salad on these hot summer days, usually put it in onion buns fresh from the bakery. So good.

I have to admit I have never heard of Duke's Mayo before. But, for those who do not like Miracle Whip, definitely use mayo. We all have our preference so tweek it so your taste buds are happy.
I did forget to add that I sometimes add some Craisins if I have them on hand. They add another unique flavor with the grapes & apple. I am thrilled that so many of you like my recipe. I hope that some of you who try this recipe will come back and repost and tell me how you liked it. And, thimblebug 6000, So sorry to tell you, that I finished off the last of my chicken salad right before I posted this. But, wouldn't it be fun for a bunch of us to meet and share some of this chicken salad and a glass of iced tea, and get acquainted. May even want to do a little quilting together. LOL!!!! ENJOY! |

Annaquilts--you can use the low calorie or fat free Cool Whip if you like. Or you don't have to add the powdered sugar to the whipping cream. I just think it tastes better with it. Not sure what you can substitute for the salad dressing except use the low fat kind.

Really quick chicken salad recipe that our family loves is simply canned white chicken breast, mayo and craisins. Just toss together with mayo to your liking. Fast and yummy!

I hate miracle whip (sorry!) but did make a chicken salad with grapes and pecans just three days ago and it was pretty darned good. also did not use whipped cream with sugar.. is this a very sweet chicken salad or is it evenly worked through with the addition of miracle whip and that other ingredient that one can only get in the south? curious has anyone else eaten this salad and what is your thoughts on it? its one thing to comment on what you see written its another thing to respond with your own experience eating this. curiosity makes me ask :)

This recipe is very popular here in the Midwest for baby and bridal showers. Eliminate the nuts (never know who may be allergic) and substitute milk for the whipping cream. Generally served on croissants or mini buns. Delicious on the Hawaiian buns.

I've had a great chicken salad recipe that I have used for a few years similar to yours with celery, toasted walnuts, dried cranberries and tarragon... but I will be trying yours this week! Thanks for posting.

my dil and gd will not eat any mayo so we use sour cream in place and in coleslaw oil dressing good for a change also I am weightwatcher so I use fat free.Two my family are wheat free.so 22 of us and we cook all different ways. At my house the more the merrier .

This recipe sounds wonderful, thank you, vondae!. I've been looking for a good chicken salad recipe ever since I tried Arby's seasonal chicken salad Marketside sandwiches. Also, I was very interested in trying Dukes mayo but it cannot be ordered on their website in Oregon, and the price for 2 32-oz jars (with shipping) was $16.00! Whew! I ordered it through Walmart for $3.27 per jar, with free pickup at one of our local stores (for those of you who might want to order online and can't buy through Dukes' website).
