Florida
Key Lime Cookies
1/2 cup butter
1 cup white sugar
1 egg
1 egg yolk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup fresh lime juice
1 1/2 teaspoons grated lime zest
1/2 cup confectioners' sugar for decoration
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture. Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
3. Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm. Yields 3 dozen

Ohio........BUCKEYE'S

1 1/2 st. of soften butter
1 box powdered suger
1 Tbsp. vanilla
12 oz. peanut butter
12 oz Chocolate chips

Mix;; butter,sugar, vanilla and PB. Roll into small balls
Melt CC in microwave, then roll the balls in chocolate chips but make sure you leave a small place open to give the apperance of a buckeye.
Place on wax paper

What says "south" better than butter and pecans??

Praline Squares
• 20 to 24 graham crackers
• 1 cup butter
• 1 cup light brown sugar, packed
• 1 cup chopped pecans
Preheat oven to 350°.
Line a 15x10x1-inch jelly roll pan with graham crackers. Bring butter and sugar to rolling boil; boil 2 minutes. Remove from heat. When bubbling subsides, add chopped pecans. Spoon over graham crackers. Bake praline squares at 350 for 10 minutes. Cool slightly; cut praline candy into 1-inch squares.

This one is alot like the cracker recipe. it comes out like a Health Bar. I can't wait to make these. I need pecans.

Luv-e, be careful. They're addictive! Ellis Brothers Pecans here in Georgia ships all over the place; and they always taste like they were just picked and shelled!

Grandpa Stubs's Wisconsin State Fair Cranberry Cookies

2/3 cup Butter softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces sweetened dried cranberries
2/3 cup white chocolate chunks
Preheat oven to 375 degrees F.

Using an electric mixer, beat butter (or margarine) and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well.

Combine oats, flour, baking soda, and salt in a separate bowl. Add dry ingredents to the butter mixture in several portions, mixing well after each addition. Stir in cranberries and chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until Golden brown.

Makes 24 - 30 cookies. Best served warm with a cold glass of fresh Wisconsin farm milk.

In memory of Alvin (Stub) Simet 1904-2005 who often made these for his children, grandchilden and great-grandchildren.

MMMMMM GOOD Maple Crunch Cookies

1 cup butter, room temp
3/4 cup sugar
1 1/2 teaspoons maple extract
2 cups all purpose flour
1/4 teaspoon salt
2/3 cup pecan halves

Preheat oven to 350. Grease baking sheet. Using electric mixer, cream butter with sugar and maple extract. Combine flour and salt; slowly blend into butter mixture on low speed. Roll one tablespoon dough into a ball. Place on prepared sheet. Gently press pecan half into cookie top. Repeat with remaining dough and pecans and bake until the cookies ore golden brown (about 17 minutes) Transfer to rack and cool completely. Makes about 30 cookies.

Amish Buttermilk Cookies Recipe
Buttermilk cookies are common in Amish communities throughout northern Indiana, where they use their own buttermilk for baking. These delicious amish cookies will last for several days in a sealed cookie jar, if they last that long!

2 cups sugar
1 cup shortening
4 eggs
4 teaspoons vanilla extract
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
1.Position one of the oven racks in the center and preheat the oven to 425F degrees. Either line your cookie sheets with parchment or lightly grease them.
2.In a large bowl beat together the sugar and shortening until light and fluffy.
3.Add the eggs, one at a time, beating well after each addition.
4.Stir in the vanilla.
5.In another large bowl combine the flour, baking powder, baking soda, and salt until well blended.
6.Add the dry mixture to the shortening mixture a little at a time, alternating with the buttermilk.
7.Drop cookie dough by rounded teaspoonfuls, 2 inches apart, onto prepared cookie sheets.
8.Bake one cookie sheet at a time on the center rack for 6 to 8 minutes, until cookies are set.
9.Remove from the oven and allow the cookies to cool on the cookie sheets for 5 minutes and then transfer them with a spatula to wire racks to cool completely

TEXAS COWBOY COOKIES FROM LAURA BUSH


Ingredients
3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups (3 sticks) butter, at room temperature
1 1/2 cups granulated sugar
1 1/2 cups packed light-brown sugar
3 eggs
1 tablespoon vanilla
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans (8 ounces)

Directions

Prep Time: 25 minutes
Bake Time: 17 to 29 minutes
Yield: About 3 dozen cookies (see note below)

Heat oven to 350 F.
Mix flour, baking soda, cinnamon and salt in bowl.
In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars; beat to combine, 2 minutes.
Add eggs, one at a time, beating after each. Beat in vanilla.
Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
Bake in 350 F oven 17 to 29 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.
Note: For 6 dozen small cookies, use 2 tablespoons dough for each. Bake at 350 F for 15 to 18 minutes.

Here's one from Oklahoma:
Cow Patties
1 C Oil
1 C butter
2 C sugar
2 C brown sugar
4 eggs
2 tsp vanilla
4 cup flour
2 tsp baking powder
2 tsp baking soda
2 cup oatmeal (dry)
2 cups corn flakes
1 pkg minature chocolate chips
1 cup pecans (chopped)
1 sm can coconut (Optional)
Instructions
Mix in a large mixing bowl the first 4 ingredients. Then add the eggs and vanilla. Sift the flour, baking powder,and soda, add to the wet ingredients. Then add the rest of the ingredients. Use an ice cream dipper to drop on a cookie sheet and bake at 350 degrees F for 12 - 15 minutes.
This make a very large batch when freeze well.

This recipe was taken from the internet from Chef2Chef contributed by Sandra Peavy. I have had these cookies and they are truly awesome - I like to add different various "chips" (white chocolate, cinnamon, butterscotch, peanut butter, etc.)

California Raisin Cookies
Raisin Filling
1/2 C chopped raisins
1/4C packed Brwon sugar
1 Tbs flour
Few grains salt
1 Tbs lemon juice
2 Tbs water
1/4 C chop walnuts

Honey Fruit Filling
1 C chop dates
1/2 C chop raisins
3 Tbs lemon juice
2 Tbs honey
1&1/2 Tbs butter
1/4 C chop nuts

Combine all but nuts & cook, stirring constantly,till thick add nuts.

Cookie dough ( I make pie crust and use that for cookie)

2/3 C butter Cream butter & sugar - add egg
1/2 C sugar milk & vanilla - mix well - add flour
1 Egg & mix well. Roll dough out to 1/4
1/4 Tsp vanilla inch thick & cut into 4 inch circles.
2 C flour Place round in custard cup & fill with
3 Tbs Milk raisin filling. Bake 350* - 10 min

The above dough can be pinched together like a Won Ton
dumpling. I do them like Won Ton dumplings

Well we fish alot here, but fish cookies??? ....lol And it really freezes hard here. Suppose I could freeze the cookie dough next to the frozen fish and then thaw it out and bake. I can just tell people the story about the fish and the freezing. Would that work ...lol ??

Here's one from Minnesota. It's one of my absolute favorites. So in honor of of the 'Cold Snaps' that are sure to be coming, I give you the

BEST GINGER SNAP RECIPE EVER Bake @ 375

3/4 C. BUTTER
1 C. BR. SUGAR
1 EGG
1/4 C. DARK MOLASSES
2 1/4 C. FLOUR
2 TSP SODA
1/4 TSP SALT
1/2 CLOVES
1 TSP CINNAMON
1 TSP GINGER
1/2 TSP B. POWDER

MIX IN ORDER GIVEN. CHILL THE DOUGH WELL. ROLL INTO A BALL THEN ROLL IN SUGAR. PLACE ON COOKIE SHEET BUT DO NOT FLATTEN. BAKE @ 375....BE CAREFUL NOT TO OVER BAKE. MAKES APPROX. 4 DOZEN

Maryland Cookie :

Suzanne Laubheimer's Version of the Famous Berger Cookie

Makes about 4 1/2 dozen

COOKIES:

1 cup butter, softened

1/2 cup confectioners' sugar

3/4 cup granulated sugar (divided use)

1/8 teaspoon salt

1 egg

1 teaspoon vanilla

2 1/2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar

ICING:

3 cups chocolate chips

Beat butter, confectioners' sugar, 1/2 cup granulated sugar and salt in a bowl until well blended. Add egg and vanilla.

Beat until light and fluffy. Sift flour, baking soda and cream of tartar and stir into creamed mixture. Chill about 2 hours.

Preheat the oven to 350 degrees. Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheet. Press to flatten with a glass buttered on the bottom and dipped in remaining 1/4 cup granulated sugar. Rebutter if necessary and dip in sugar each time. Bake 10 to 12 minutes or until light brown on the edge.

When cookies are cool, melt chocolate chips in a small, heavy-duty saucepan over lowest heat possible; stir. When chips begin to melt, remove from heat and stir. Return to heat for a few seconds at a time, stirring until smooth, then ice cookies.

OR
This icing recipe.....

For icings
1 1/2 cups confectioners sugar
1 tablespoon light corn syrup
2 teaspoons fresh lemon juice
1/4 teaspoon vanilla
1 to 2 tablespoons water
1/4 cup unsweetened Dutch-process cocoa powder


Make icings while cookies chill:
Stir together confectioners sugar, corn syrup, lemon juice, vanilla, and 1 tablespoon water in a small bowl until smooth. Transfer half of icing to another bowl and stir in cocoa, adding more water, 1/2 teaspoon at a time, to thin to same consistency as white icing.

Ice cookies:
Turn cookies flat sides up, then spread white icing over half of each and chocolate over other half.






Note: Don't make cookies on a damp, rainy day because it takes too long for icing to set.
