Cranberry Nut Bread
 
A couple of nights ago, I was in the chat room and we got talking about baking. I mentioned this recipe and immediately three people wanted it. I thought maybe someone else would like to have it as well.

CRANBERRY NUT BREAD

2 cups flour
1 cup sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
¼ cup shortening
¾ cup orange juice
1 teaspoon grated orange rind
1 egg, well beaten
½ cup chopped nuts
1 cup coarsely chopped fresh cranberries

Combine dry ingredients in a large bowl. Mix in egg, orange juice, rind, and shortening.
Fold in cranberries, and nuts. Bake in a greased loaf pan at 350* for one hour or 325* if using a glass pan.

When I made this a couple of weeks ago, I checked it with a toothpick sometime before the hour and it was already done. You may want to keep an eye on it as some ovens are faster.

i have this recipe, i love it ..everyone loved it :) . i used to make small loaves (cooking time will differ according to pan size). i gave them as part of home made christmas gifts each year. people loved them & looked forward to recieving them.

DH's favorite quick bread!
Here is another step that I use.
Soon as bread is removed from oven: Remove from pan, rub stick butter over top, sprinkle top lightly with sugar, wrap in wax paper, place in refrigerator for 3 hours, rewrap with fresh wax paper.

I also use the juice from the orange that I used for the orange rind to create the 3/4 cup OJ.

If using mini loaf pans bake 30-35 minutes.

I will have to make one and take it out to my brothers for a tasting review this week end. I do the majority of the baking for the holidays and my brother is our official taster.So I am always looking for new recipes to go with our long time favorites.
