I have been wanting to try a cucumber sandwich ever since I saw this post back in Feb. Cucumber sandwich - who would have thunk??? So today I did. In fact I made 3 of them - 1 with butter, 1 with mayo & 1 with hummus - all with S&P. The one with butter won - hands down!! YUM!! And for sure you have to cut the crusts off!!! :lol:

Both my parents were from Wales and we had these often, best when the cukes came from our own garden. 2 slices thinly sliced bread, crusts removed, butter each slice, cover 1 slice with thinly slices cukes (overlapping), little S&P, put the lid on and slice criss-cross. YUM. Butter is best (not margarine). Sometimes it was a cheese sandwich done the same way.

Well, I was reading and found this. My recipe is a year late, but is so good. We make these for baby or bridal showers. People love them!

2 or 3 cucmbers, sliced thin. I usually peel them first.
Italian salad dressing in a bottle
1 8 oz. cream cheese
garlic powder to taste
white sandwich bread

Put sliced cucumbers in a ziplock bag. Pour Italian dressing over the cucubers. It may not take the whole bottle. Refrigerate until ready to serve. Mix softened cream cheese with a little garlic powder. Not too much.
Cut bread into triangles, squares, or small circles. Remove crusts first. Drain cucumbers and put one on each sandwich when ready to serve.
Very tasty. Wonderful for parties.

What is "S&P"??

Hi

Over here in the UK we normally do the following.

Use a good White Loaf sliced, peel the cucumber first the thinly slice.
Use a good quality butter not spread and put the cucumber on the buttered bread, sprinkle malt vingar on the cucumber and place top butter slice on.
Cut into triangles and cut of the crusts.
hey presto cucumber sandwiches, but really us british do not eat them lol
