My Mother, 89 when she died in 2007, always made this when I was growing up and after. She called it bean sandwiches. She toasted the bread, put slices on a cookie sheet, split a can(s) of pork and beans on the slices. She then put a slice of cheese on each and covered the cheese with 4 half slices of bacon. She them put it in the oven to broil the bacon slowly done. When I asked about the receipe she told me her Mother fixed it during the depression years when she was growing up. Her Father raised pigs to make cured hams and bacon for their meat and to sell any extra they might have along with raising chickens and a cow for milk. Though we are truly blessed with so much more now it is still a favorite of mine and I fix them for my family every now and then. Brings a lot of great memories back when I would help my Mother in the kitchen.

Sounds like a "GO FAR" recipe to me. the bread helped to fill everyone up. Sounds really good.

I worked at a stable and this was often the lunch sandwich. I like them just fine, I can’t get the dh to want to try. I just thought Grandpa B. made up the recipe...My mom who lived during the depression never made or even mentioned these. If i remember correctly they them Bean Bacon sandwiches.

Both of my parents graduated from high school in 1933 - depression era.

Since mother made homemade bread and homemade beans, having a cold bean sandwich was a special treat. We would scoop the beans so that the liquid remained in the bowl. Place the beans on top of the bread and smash them down with a fork. Top with mustard or catsup and another slice of homemade bread.

My version today would include drained beans on whole wheat bread, top with thick slice of sweet onion and eat as an open face sandwich. Please excuse me. I'm drooling.............

this does sound like a budget stretcher! The closest thing we ever ate was good ole weenies and beans. With 5 kids we had it several times a month. And loved it

My family calls that a "Pork & Bean Sandwich." We've never met anyone else who made them. Now my sis in law and my dh can know we aren't so weird after all! Well, at least not in this one thing.

These comments are so interesting-I never heard of bean sandwiches--but since a person never gets too old to learn-Im 59- this recipe will definitly be added to my menu-we love beans and bacon in my family--I am always looking for a quick meal--retired now with arthritis--this sounds delicious--I will add a tossed side salad when I make this recipe---thanks so much--

The reason I fry the bacon separate is that when I put the raw bacon on top and stuck it in the broiler, the grease
would go down into the sandwich, and also, I would most times burn the bacon..:D

Yes we did when I was growing up but usually it was just beans or if we had lots of eggs mum would fry the eggs and put them on top.
