Easiest dessert ever
 
20 oz can crushed pineapple - do not drain
1 box instant vanilla pudding
1 tub whipped topping - 8 oz.

Mix pineapple and pudding in bowl. Let sit 3-4 minutes then carefully but thoroughly fold in whipped topping. Spoon into your prettiest dessert glasses and refrigerate. Serves 6.

I used that recipe in Weight Watchers. It was called pineapple fluff, I ate lots. Used sugar free pudding and I can't remember if it was fat free or sugar free Cool Whip. It was great.

I make a similar dessert, but it includes a lot more fruit. This is a yummy fruit salad dish, especially in the summer. This makes a very large bowl. You almost can't mess this dish up. It can be made a day ahead of time and chilled.

Shanah's Fruit salad recipe

Reserve the drained juice to mix with the vanilla pudding

1 lg can Pineapple tidbits or crushed, drained (Good luck draining crushed pineapple.
1 sm can Pineapple tidbits or crushed, drained
1 lg can Fruit Cocktail (I used the Very cherry), drained
2 small cans mandarin oranges, drained
3 large bananas or 5 small bananas, peeled and sliced
1 large Cool Whip (I used 2/3 of the 16 oz container)
1 family size instant vanilla sf pudding

Put drained juice in a large bowl. Add the vanilla pudding and mix with a whip. Then stir in the cool Whip. Next put in all your fruits and stir well. Chill in the fridge before serving. Will last for several days if kept refrigerated.

BHD NOTES/ADDITIONS
1 can sliced peaches, drain and cut into chunks (bhd only)
Chopped pecans for garnishment
I’m thinking about adding more cherries next time.

Gee Tranum, we must be thinking along the same lines. Yesterday I made an eclair cake for dh & I. With the cooler weather here in mid Tennessee I wanted to have a 'taste of spring'. Sure did hit the spot last night!
My mom used to make Ambrosia for events. A can of fruit cocktail, some shredded coconut & mixed with real fluffy whipped cream. Mind you- the real stuff, not the canned or frozen.

I grew up in the south so Ambrosia was at almost every summer meal. Whipped cream, sour cream, mini marshmallows, chopped pecan, red cherries, tangerines, grated coconut. .

Around my house this is called "Abby Salad". My daughter, Abby, always wanted to "cook" but was too young to use the stove. She was three or four. So, I would let her mix this up and she was so pleased with herself. She wanted to take it to every potluck or family gathering. We also have "Abby Cookies" but they did need a little bit of mom help. They were the traditional no bake cookies I keep seeing on Facebook. ;) This great new cookie discover is just an old friend for many of us. Love your salad AKA Abby Salad.

This same recipe can be made with a box of dry jello in place of the pudding mix. I first ate it at one of my bridal showers in 1970.
