I am so jealous! Best corn on cob is from Midwest. Last time we had really good corn was August 2004. Son had a garden. Ate fresh veggies everyday. Gained weight but healthy weight. I'll tell you a good breakfast is to scramble eggs and throw some corn in it. Not like an omelet just eggs and corn. Yumm! Your potato salad sounds like a "Why Not Salad".

I love fresh corn, creamed corn soup, and of course you can always make it with cornbread/mix and it comes out a great addition to a corn bread that is super with a fresh chili. Never a day I couldn't eat corn. :)

Rosemary Corn
 
One of my favorite is to boil the corn in a dutch oven. Quickly drain the corn and remove. Place some butter in the bottom of the pan and melt. Add some 'bruised' fresh rosemary (place between wax paper and pound/crush). Move rosemary around in the melted butter until the 'scent' is released. Add the cooked corn back and mix/roll in the butter. Salt and pepper and try not to eat too much.

Put 1/4 cup of water in your crockpot. Add buttered ears of fresh corn and let it cook on low for three hours. Al ready to eat!

OMG. I couldn't wait three hours...pop ours in micro in husk for 3 min., then they slide right out of that husk...all that silk too!

Oh I cannot wait for the Zuchini overload ..I am hoping someone in the neighborhood will have pity on me (as I didn't plant any this year) and give me some of their excess !LOL

My mom makes a yummy side dish sauteing mushrooms and corn off the cob in bacon fat....so good!

An old Farm Journal recipe for fresh corn cut off the cob:

Indian Squaw Corn

Fry abut four or five slices of bacon (You can cut the slices with kitchen scissors) until done to your liking
Throw in four cups of cut fresh corn
Break three or four fresh eggs into the mixture
salt and season to your taste.

Stir until warmed through and eggs are cooked.

Found the recipe more than sixty five years ago, and its a favorite of my dh who asks for it from time to time. He was raised on the farm, too, but had never tried it until after we were married.

This sounds good...minus the jalapeņo pepper..for me anyway!
