The cream cheese is 3 ounces or 8 ounces? You didn't mention if it was the small size or the large size.

Would you please post the recipe for the Mandarin Orange Cake? It sounds wonderful.
BTW, when you double everything for the larger sized cake, add a couple of Tbsp. of rum. Wheeeee.

Fresh Apple Cake

INGREDIENTS
2 eggs, beaten
2 cups white sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon salt
1 teaspoons baking soda
2 teaspoons ground cinnamon
¼ teaspoon nutmeg
1 cup chopped walnuts or pecans
4 cups chopped apples

DIRECTIONS
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a medium bowl, stir together the sugar and apples, set aside. Sift together the flour, baking soda, cinnamon, nutmeg and salt.

2. In a large bowl, stir together the oil, eggs and vanilla. Add the apples and sugar, mix well. Stir in the dry ingredients, then the nuts. Pour into the prepared pan and spread evenly.

3. Bake in the preheated oven for 45 minutes, or until cake springs back to the touch.

4. Ice with Cream Cheese Frosting:
1/8th cup half & half
1 ½ cup powdered sugar
1 pkg cream cheese softened
3 tablespoon butter
½ tsp vanilla

This weekend, my husband and I made this cake. It was fantastic! We made it on Saturday afternoon, and by this morning there is two pieces left. I shared pieces with family members not living with us. Everybody loved it! I believe this cake was better than the one the man brought to work and wouldn't share the recipe. The icing here was good, but I still want to make this cake and try the icing recipes that have been posted here.

German Raw Apple Cake


4 c. chopped raw apples
1 c. chopped nuts
Place apples and nuts in a large bowl and sift over the top:
2 c. flour
2 c. sugar
2 tsp baking soda

Mix well until apples and nuts are coated.
Add a beaten mixture of 2 eggs, ½ c. oil and 2 tsp. vanilla
Mix well until all ingredients are blended.
Bake in oblong pan, greased and floured, for 45 min at 350-375 degrees.

As an interesting sidenote, my husband submitted this recipe for a fire department cookbook many years ago, but when they printed it, they left out the sugar. Made for a lot of phone calls after the cookbook was published with my DH's name as contributor.

I used the 8 ounce size and the cake turned out great.

My mother used to make an Apple Nut Cake and this sounds alot like that.
