I ate a piece of this cake one year at work (when I lived in Tennessee) and went home and cleaned the whole house. It is very delicious!

Hummingbird Cake

3 c. flour
1-1/2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon

3 eggs - beaten
1-1/2 c. salad oil
1-1/2 tsp. vanilla
1 8 oz. can crushed pineapple with juice
1 c. chopped pecans (I used walnuts)
2 c. chopped bananas

Combine dry ingredients. Add eggs and oil and stir until dry ingredients are moist. Do not beat or cake will be tough. Stir in vanilla, pineapple, nuts and bananas. Put in well greased 9" x 13" pan. Bake at 350 deg. for 55 min. Cool at least 15 minutes.

omg when i first read this i thought it was a recipe to make for my hummingbirds then i clicked on the recipe and wow it looks good , i printed it out and i am going to make one !!!

Love, love hummingbird cake. I have only made one for a boss who doesn't eat chocolate (weird, right?) and it was so yummy.

Thanks for the recipe...Made one last night, going to surprise the family with it for dessert this evening...it smelled wonderful when it was baking :)

You will love this - it is one of the best cakes I've ever baked. I'm not much of a cook, but this one is really easy and pretty hard to screw up!

OMG - I just realized that I forgot to include the Icing recipe!!

1 Pkg. 8 oz. Cream Cheese - softened
1/2 c. butter
1 lb. Powdered Sugar (5 cups)
1 tsp. vanilla
Beat ingredients together & Ice Cake. Sprinkle pecans or walnuts on top.

It was wonderful!!!!! Left out the pecans, since we have a nut allergy in the family...Most certainly, a new family favorite! Thanks for the recipe :)
