I want to try some different things next year. What do artichokes taste like, AND do you have any recipes for them?

We always just steamed them, peel off a leaf, dip in garlic butter, scrape the meat off between our teeth and toss the leaf away :D:D:D The heart(center) we slice and eat dipped in the butter.

We love italian style artichoke hearts, they are infused with a lovely oil and vinegar mix with some black pepper and herbs....bliss!

We steam them, and then dip the leaves in a garlic mayonaise. Get to the heart, scrape off the fuzzy schtuff, and chow down on it too! Lucky for me William does NOT like them! :D

I use arichoke hearts in salad all the time. They come in a jar flavored with oil and herbs. I just chop and toss them in.

1 cup Mayonaise 1 cup of Parmesan cheese shredded 2 cups of Mozerrla cheese shredded 1 TBS Garlic power 1 8oz can of articokes drained and chopped Mix all together and bake in a lightly greased 8X8 baking dish at 325 for 25-30 minutes. Sever with Pita bread cut up in bite size pieces. Enjoy |
Ahhh, artichokes! My favorite! We used to always eat them with mustard/mayonnaise. Yum!
When my kids were little, we (their dad and I) had them convinced that the center part, the "heart." wasn't very good, but that we'd eat it for them so they wouldn't have to... We were so bad! My new husband is perfect in every way, except that he grew up in Chicago and doesn't "get" artichokes. So sad......! Enjoy!! |
We've served Artichokes 4 times in the last week. I like to use the pressure cooker to cook. They cook up much faster. I throw a couple cloves of garlic in there and some salt and sometime some lemon.
We serve with garlic butter. We have also served a garlic butter with chopped fresh basil and maybe a little lemon as well. I don't really care for the marinated artichoke hearts. They grow them around here and my daughter got a whole bag full of them from her Uncle in law who's neighbor worked an artichoke field. As far as taste, you mostly taste what you are cooking or dipping them into. |

When I cook them I cut off the tips of the leaves about 1/3 of the leaf. Then cut off the stem, so it will sit up nicely in a bowl after cooking. I put minced garlic in a large pot and place the artichikes upside down in a steamer basket. Put on the lid and close the valve. bring it to a boil, simmer covered for 1 hr and 10 minutes ( if they are large) We serve them with mayonaise. It is one of our favorite veggies.

I do whole artichokes pretty much the way the others do - steam and serve with garlic butter. Frozen or canned are good like this: thaw frozen, drain canned - place in oven proof dish, pour EVOO and lemon juice over, add chopped garlic, sprinkle with Italian flavored breadcrumbs and bake till bubbly. Mmmmm - enjoy!

Don't drink really expensive wine whilst enjoying artichokes...they can change the taste and make it quite sweet....so choose a more acid wine variety.

Artichokes are very good just don't eat the inside middle of one because they have like little picker's and if you eat them they will stick in your throught but they are very tastie you boil them in salt water for like 1 hour until the peddles come off easy when they are done take them out of the water to drain you can melt some butter and dip the part you tore off in butter or you can get some mayonaise and dip in it they are so good for you lots of iron and the artichoke hearts are good in antipasto salads yummie

Note: you only eat the bite at the bottom of the leaf (near where it is torn off) you can cook those puppies to all eternity but your scrapping the 'flesh' off the leave not chewing on the whole darned thing. My husbands first wife made artichokes and he said they were AWFUL! I said really they are actually very good we love them and he said oh no, they were so friggen chewy and he had a hell of a time getting the hamburger up on his fork. HUH? She put ground round over the top and baked them. EGAD. If you find that recipe do not attempt it it will not be good. At all. We boil and simply eat them with mayo. If you shove a couple huge garlic cloves in the center after you have cut the tips before you boil them it imparts a bit of garlic flavor to the artichokes.

they just taste .... GREEN. :P i do what they do. cut off the tips with a kitchen shears. steam 'em. dip each leaf in garlic butter, scrape with my teeth and toss the leaf away. i scrape away the 'fuzzy choke', those hairs on the bottom, and eat the base. i cook 'til tender, but not to death.
sometimes i get those ones in the can. then i dry them off, dip in egg, roll in italian breadcrumbs, and fry. these are good hot or room temp. |
The other day I was at cosco and they were making pizza with pickeled artichoke hearts wasn't bad had a tangy bite to it but was good went well with the other toppings

In addition to what Alaskasunshine said, after cooking, I like to take the center leaves out, put in some finely sliced lettuce, as a bed and then either a chicken salad or a shrimp salad sutffed on top of the lettuce. Put a little mayo on the side to dip the leaves and when you have eaten all the leaves, you have the salad and the heart still to chow down on.
I even put the jarred/pickled ones on pizza. I love them! |
One of my chicken finger main dish recipes calls for artichokes and I use the ones in a jar. They add a nice touch. The chicken recipe is baked in a sauce and served on a bed of wilted spinach. It's become a favorite for meals when I'm entertaining guests.
