We made soup when camping. Used the soup or beef stew mixes where you just add your meat and water. Easy P easy and so filling. Also the hobo packs - burger patty, sliced potatoes and veggies wrapped in heavy duty foil. You can fill each packet to taste.

take a large tomato cut into disks and fry in olive or corn oil till soft take 2 eggs scramble in dish and pour onto tomatos in pan when solid flip to other side for a minute then season to taste & serve take large potato cut into disks fry in pan w/ same olive oil or corn oil season w/ Cajun spices cook till golden brown serve w/ eggs |
Bubble & Squeak
Brown up some sausage and onion. Add in some some potatoes cut how you like. They cook quicker cut up. Cover with some water. When potatoes are done add cut up cabbage sliced and cover. The real trick is to not over cook the cabbagd you want it to be barely crisp. Serve with some hearty bread or make some biscuits. |
Hominy, sausage, onion and carrots
We buy dried hominy at the Mexican grocery and soak it over night. Boil the hominy until tender or use canned hominy drained. In a skillet or before hominy cook up the sausage and some onion You need some strong tasting meat to balance out the hominy Or season it well Add some water. Once those two are cooked add in some carrots and cook until carrots are tender. Amounts depend on the size group. It tastes best cooked on a fire. Good with home made biscuits. |

I don't mind prep work, most will be done at home. The menu is leaning towards cooking the main evening meals at home, freezing them and packing them in an cooler.
I'd make ahead things like beef stew, chili, chicken stew-basically chicken pot pie without the pie part-use noodles instead :), spaghetti sauce, etc. You can even precook the pasta for spaghetti and noodles for chicken stew and transport them in plastic bags-just toss in when the stew or sauce is hot to warm them up. Anything you already make and know your clientele likes :). Then you can take steaks, hamburgers, chicken parts, whatever you all like, to grill, cook in frying pan, or stir-fry. Campfire Omelet - One item that we would also use for breakfast was to take a heavy duty (freezer style) sandwich bag. We would have various omelet type items cut up, so onions, ham chunks, sausage bits, peppers, shredded cheese, etc. These items were in separate bowls and the person could choose their own toss ins. Put one egg into the freezer bag and use your fingers to mix up the yolk and white, add the items that you choose to have in the omelet. Then toss the bag into a boiling kettle of water. In a few moments you will have an omelet which is personalized to the person that made it. It is a great breakfast for groups.
Fruit Crumble - Another quick and easy recipe is a dessert. Take one can of pie filling and put it into a cake size type of pan. Crumble ginger snaps over the top and put a piece of foil over it onto the campfire. A little vanilla ice cream once it is finished on top, is very nice. Burritos, pre-made at home, wrap in foil, warm up by the fire!! Can be breakfast type or dinner type.

zozee unfortunately they don't make the shake & pour anymore. I used it on our boat. very convenient.
