oil, margarine, nuts, egg, egg substitute, sugar, splenda variations, depending on what you have and how 'healthy' you want to make them |
i made this soup/stew recipe the other day and it was absolutely delicious. Didn't change the recipe at all (other than not measuring exactly) and I would definitely make it again. The pumpkin or squash basically falls apart and thickens it nicely. The apples sweeten it nicely and are a flavorful addition. Serve with a crusty bread to soak up the broth.

This is a pumpkin soup that I have made many times and LOVE!
Pumpkin Curry Soup 1 cup chopped red onion 3 garlic cloves, crushed ¼ cup butter 1 tsp curry powder ½ tsp salt 1/8 tsp coriander 1/8 tsp ground red pepper 3 cups chicken broth 1-16 0z can pumpkin 1 cup light cream or milk 1 can cannellini beans Finely chopped green onions for garnish In a large saucepan sauté onions and garlic in butter until onion is soft. Add seasonings and continue cooking for a minute. Add broth and simmer uncovered for 15 minutes. Stir in pumpkin and cream(milk) and continue cooking for 5 minutes. Garnish with green onion. Serves 4 Add chicken(optional) |
