Growing up my mother fried a couple of strips of bacon (cut small) and poured a can of kidney beans over them until warm. They are delicious with meatloaf or pork chops.

With 24 cans, I suppose some are too outdated to sent to a food pantry. But that doesn't mean you can't eat them yourself. One can a month and they will be gone in two years. Take a bean dish to every pot luck and more will be gone. But don't go buying more in the meantime. LOL

pocoellie, I have a quart jar of home canned mixed beans and will add as you directed. A rainy day tomorrow and will be perfect to warm me up.

I make vegetable soup with chicken and put a can or two of beans in at the end instead of noodles. Much healthier yet still satisfying. We also make egg burritos for breakfast and put a can of beans in.

Multi-Bean Minestrone


1Cup chopped onion
1 C. chopped carrots
1 C. chopped celery
3 cloves garlic
2 T. olive oil
1 28 0z can tomatoes
1 tsp. Basil
1 tsp oregano
½ tsp chilli flakes
2 cups of stock
1 cup chopped zucchini
½ bag baby spinach
3 cans of beans of different kinds drained and rinsed ( chick peas, romano, Kidney, white, lentils)
Salt and Pepper
Grated Parmesan cheese


Saute onion, carrot , celery and garlic in oil in large pot for 2-3 mins.. Add tomatoes, herbs, chilli flakes, stock and zucchini. Simmer for 10 mins.


Add beans and simmer for 5 mins.


Serve with good bread and sprinkle with parmesan. Will freeze very well. Is very thick!!!

Freckles48, that sounds like a wonderful winter soup. It's has been cold and rainy here in California, the perfect recipe for this kind of weather. I'll get out my bread machine and make some French/Italian Bread.

Only 18 cans of kidney beans to go...:rolleyes:
