Wow these are Great. I think martha stewart meatloaf comes out greasy - too much ketchup in hers.

My recipe is very simple and my family just loves it and it's my own creation!!

2 lbs. hamburger
about 2 - 3 cups crushed tortilla chips
1/2 cup salsa (I use the mild)
1 egg
Mix together, put in loaf pan and spread some taco sauce on top. Bake until done. I also drain any liquid while the loaf is baking, keeps it from getting soggy. Enjoy!!

Paula Deen's "Basic Meatloaf" is yummy. You should be able to find it on her website.

If you make your favorite meatloaf and cook it in your crock pot you will be surprised. Use a crock pot cooking bag put your meatloaf on high for one hour and then turn down to low for two hours it is perfect. It's moist but in a good way. I like a dryer denser meatloaf most of the time but this is very good and so easy to clean.

I make homemade green tomato relish and add that to meatloaf instead of tomatoe sauce it gives it a nice little bite and lots of flavor. Two of my friends love the relish and use it in their meatloaves and told me to try it. It was very good. You can add a little tomato paste, sauce, soup, chili sauce, or ketchup to the top too.

Try cooking it in the crock pot see what you think.

Sewcrazygirl,no i don't use any pork or veal just plain Ground Beef and pour off any drippings i have after baking it(:)

My dh doesn't like meatloaf . . . or at least he didn't until I found this recipe. I also have a 3 and 5 year olds that love this meal.

Note: Because my family is not very large, I make the meatloaf mixture, freeze half for another quick meal – adding 1/2 recipe of sauce just before putting it in the oven. This changes the meal to serve 4. Hope you give it a try!

Little Meat Loaves

1 pound lean ground beef or ground turkey
1 pound ground pork or sausage (I use Jimmy Dean reduced fat)
2 eggs, beaten
¾ cup crushed buttery round crackers
½ cup milk
½ cup grated parmesan cheese
½ cup chopped onion
1 teaspoon Worcestershire sauce
1 teaspoon dried Italian seasoning
1 teaspoon garlic salt

Sauce:
1 cup ketchup
½ cup packed brown sugar
1 teaspoon liquid smoke (found in BBQ aisle in small bottle)
1 tablespoon Worcestershire sauce

Preheat to 350 degrees.

In a large bowl, combine the eggs, cracker crumbs, milk, cheese, onion, Worcestershire sauce, Italian seasoning, garlic salt, ground beef/turkey and ground sausage. Mix together well and scoop into 24 muffin pan.

In a small bowl, combine the sauce. Mix well and spoon sauce over each muffin/loaf.

Bake at 350 degrees for 30 to 35 minutes. Makes 8 servings.

(If muffin pans are not available, form into 8 individual loaves. Place loaves in a 9x13 inch baking dish. Bake for 45 - 60 minutes.)

Here's my favorite recipe and it has won over many who didn't previously like meatloaf:
Mix all together:
2# lean ground Beef
3 slices Bread, torn up
1 Egg
1 cup Milk
1 med. Onion, diced
1 Tbs Worcesteshire sauce per lb. of hamburger
1/4 tsp. Salt, Celery Seed, Dry Mustard, Garlic Powder & Pepper,
Shape mixture into a loaf shape into a 1x13" pan.
Bake 90 min. @ 350 degrees.
Remove loaf from greasy pan to a serving platter.

I tend to change meatloaf recipes from time to time:
I use pizza sauce or salsa in mine instead of catsup.
All ground beef...no pork yuck..too greasy.
bread crumbs or crackers
My meatloaf sizes vary from individual small mini ones to up to 15 pounds... depends of if I make the 15 lber one for my kids, grandkids & parents.

Meatloaf Cordon Bleu---Love this!
Preheat your oven to 350. Mix up 1 lb. ground beef as you would for your regular meatloaf. Then place the mixture on a piece of heavy duty aluminum foil (about 18" long), and flatten into rectangle about 1/4"-1/2" thick. Leave about 3"-4" of the foil exposed all around. Place a layer of thin sliced ham on top to about 1/2" from the edge of the meat, then a layer of thin sliced swiss cheese on top of that. Roll up jelly roll fashion and seal the edge and the ends well. Enclose this in the foil tightly and place in baking pan with sides, (not a cookie sheet). Cook about 1 hour. Remove from oven leaving the foil closed and let stand approx. 15 min so cheese doesn't run out when you open it.
After cooling, remove carefully from foil (grease will accumulate in the bottom) ( I use 2 spatulas to remove it). Place on serving plate and cut slices about 1/2" thick.
While meatloaf is cooking, make a brown gravy, and when you serve the slices, put a bit of gravy over it. Enjoy!
