My family thinks I make great meatloaf, really I just kind of throw things together:

Lean Hamburger 1 1/2-2 lbs
1 egg
some dried bread crumbs
some onion
some celery
some green pepper
1 can diced tomatoes
1 can Italian seasoned tomatoes
salt, pepper, garlic powder or garlic salt to taste

mix

shape into loaf

top with Ketchup and at least 2 bacon slices

This is our favourite recipe, it's from a cookbook where all the employees submitted their favourites: (and I usually have these ingredients in the house)

Meatloaf:
2 eggs
2/3 cup milk
2 tsp salt
1/4 tsp pepper
3 slices fresh bread (pinched into crumbs)
1 onion chopped
1/2 cup shredded raw carrot
1 cup shredded cheddar cheese (I use aged for the flavour)
1 1/2 lbs lean ground beef

Sauce:
1/4 cup brown sugar
1/4 cup ketchup
1 TBSP prepared mustard

Break eggs into a large mixing bowl & beat lightly with fork. Add milk, salt, pepper & bread crumbs (I have used Panko crumbs but they're really too fine & absorb too much moisture). Beat until the bread disintegrates. Add onion, carrot, cheese & beef, mix well. Pack into a 9"x 5"loaf pan. For sauce combine the brown sugar, ketchup & mustard & pour over the top. Bake at 350*F for 1 hour. Let stand 10 minutes & serve. Will freeze well & is also nice cold.

DD and her DH will often request this as our "guest" meal, and I serve it with his favourite garlic mashed potatoes (now that I've figured out to just add the purchased garlic butter...mmmmm)
