I pick up my exchange student on Tuesday who happens to be a vegetarian from Austria. I've looked up some recipes on the computer but would like to see if you have any ideas and recipes. Thanks

Well, veggies are always well received with vegetarians. The hard part is finding proteins. Beans, tofu, and cheese are wonderful sources. You'll have to ask him what he normally eats. Sometimes it's easier to go with a particular cuisine. Say, Cuban. You would make black beans (protein/meat), rice, green salad, veggie. Fresh fruit for dessert with some ice cream or frozen yogurt on the side. Or how about Asian? Baked or stir fried tofu is yummy with veggies and soba noodles. For dessert try a fruit juice granita. My kids love vegetarian quesadillas. They use flour or corn tortillas and top them with cheese, salsa, veggies, fresh herbs, etc. They dip them in homemade pico de gallo, guacamole and sour cream. Or go Mediterranean and serve hummus with raw veggies and toasted pita bread. I'd love to hear what your student eats. I'm always open to learning about meatless meals.

Thanks Chele. Wow you gave me some wonderful ideas.
I may end up liking this whole menu. Its going to be a fun
learning experience. I'll keep you posted.

Does your student eat dairy? That makes a big difference! I have lots of friends who are veg. and some that are vegan! Believe it or not it is very easy to get enough of what you need without eating fish or meat! (a little tip is to have nuts, walnuts, almonds, pecans on hand...a little set out to snack on is a good thing...but don't overdo it!) Good luck and have lots of fun. You might check out all recipes.com. I can also share a few recipes if you'd like.

Hi Chiggar thank you, I'm really not sure about how much of a vegetarian she is. I really don't know much about it myself.
I am hoping its not the vegan one though. I know they don't eat eggs or milk or anything. Yikkes.
I emailed her earlier about it but haven't heard back yet. Or I may not know much more til she gets here Tuesday. I was actually hoping to get some groceries before she got here so thats why I'm checking early for ideas and recipes.

Garden burgers are good, and there are a variety of other soy based meats available too, usually in the freezer section

Peanut butter, dry beans, bulgar wheat (looks like bits of macaroni and high in protein, used like rice) egg substitues are good too :D:D:D

Garden Burgers are yummy. This is why I wanted a bit of a head start. I just have a small grocery store here and this is all stuff they don't carry. I have to go shopping that is an hour away. More great ideas. Thanks so much. My list is growing.

Pizza, spagetti, soups, edamame salad is really good and can often be found at the deli center in your grocery.

I eat vegan to help keep diabetes in check. Works well.

I've never heard of edamame salad. I'll have to look that one up. I am not diabetic but I have had pancreatic problems so the vegetarian diet was brought up by a nurse in the past so thats why this is all looking great to me. I need to follow this anyways for the most part. I'm excited to learn new ways. From all the help here and Norina I should be good to go for a great diet pretty soon. I could stand to loose a pound or 20 too.
Thanks for the help. ;-)

Okay I have to ask how to make bacon from a Garden Burger.
I love BLT's - the T. I might be able to figure out the black bean burgers. Altough it might be difficult keeping the beans on the barbe
Thanks for the tips. I'm getting hungry.

sassey 08-20-2010 08:44 PM

The bacon can be found in the freezer section at the grocery store next to garden burgers made by the same company. The black bean burgers actually stay together quite well I will look for receipe a little later

Check out Bisquick (is this ok to use) "Vegetable Pie. I made it the other day and it is wonderful. Even good cold. I don't know if this helps but I hope so.

Vegetable Pie sounds really good. Maybe its like Sheppard Pie without the hamburger. I'm really glad I did this post so many ideas I never thought of. Thanks so much. This is my first exchange student so I want everything to go well. Thanks to everyone here my worries about this are easing up.

Connie Merritt 08-21-2010 07:09 AM

Hi,

If you go to Bisquick.com search for Vegetable Pie I think that will bring it up. If not, let me know and I will send you the recipe as I changed a few items. Glad to help.

Another good thing to make is Using wheat Flat Out Bread[usually on shelf in front of deli in Wal Marts.] I spread refried beans on mine[hubby has pizza sauce] and then put whatever you want on it[mushrooms, olives, peppers, onions,we use vegiburger,or anything you can think of]. Then just put whatever kind of cheeze you want. Bake 350 till cheeze is turning brown or fresh veggies are cooked. I make up a bunch and cut in half , wrap and throw in freezer. When he takes one for lunch, he warms it up in the micro. Enjoy!!

Hi Connie. I looked on the Bisquick box and the recipe isn't there so I looked it up at the .com site and found a few really good looking recipes. I put it in a file for later. Thanks for that.
I hope she doesn't mind being my guinea pig. This will all be an adventure. Ha.

I like the freezing part. That will come in handy.

Our DIL and son are vegans. The veggie bacon is in the greezer section and is pretty good and real easy to do. We make BLTs all the time They use vegan mayo but my DH still has to have his miricle whip. The chicken was good too by morning star They also have veggie hotdogs we like to make corn dogs with Jalepinos or hot dogs. She doesn't eat bread though so we made wraps. It was hard sometime no eggs, no gluten, no dairy. Found it best just take them shopping and let them pick what they would eat instead of guessing. Veggie soups are good to make too. but with vegitarian bouillons. spaggehitt, [pasta with tomatoe sause and we like to add a little garlic. I learned to check box labels cause a lot of things have meat seasoning in them. It was a learning experience for sure. I can understand no meat but sometimes it is a real pain in the butt about no eggs or dairy etc. Good Luck

dglvr 08-21-2010 08:55 PM

Thanks cr12cats. I'm really hoping she isn't the vegan vegetarian. I don't know if I could go that far. I did email her
and ask her about it but she answered all my other questions and not that. It will be interesting I'm sure.
I didn't know they even made veg. hot dogs and all that.
I got alot to learn with this. I even went to our library and they only had 1 cook book that was last checked out in 07. Which also mean the school lunches probably won't be to good either.
We are in farm country here. I'm an hour away from shopping so when I go I better plan on spending alot of time there.
Thanks for you help.
