This recipe is so simple and not too sweet. Hope you enjoy it.
Use your favorite pie crust recipe. Preheat oven to 425-degrees F In large bowl mix together: 3/4-cup sugar, 3 Tablespoons corn starch, 1/4-Teaspoon salt, and 1/2-Teaspoon ground cinnamon Gently fold in 4–5 cups of fresh blueberries into sugar mixture. Line 9-1/2-inch pie dish with pastry. Pour in berry mixture. Dot with 1 Tablespoon of butter. Cut remaining pastry into strips and make a lattice top. Crimp edges. Bake on lower shelf of oven for about 40–50-minutes, or until piecrust turns golden brown. Time depends upon your oven. Top with ice cream or whipped cream. |

Mmm. Sounds alot like mine. I usually add just a teeny pinch of clove and cardamom to mine. And if you want to make the crust look like a cooking magazine- brush with a beaten egg and sprinkle raw sugar on it. - Shiny crystals.
Also I frequently cut up one ripe peach or nectarine and mix it in with the blueberries. I won a couple of blue ribbons for this pie years ago in CT. I made this a couple of weeks ago for my husband's birthday. |
