I tried this recipe with a brownie mix because I love the top caramelized part. It's like eating the muffin top only!Muffin Tops
Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment. Use a standard ice cream scoop (1/4 cup) to scoop out the dough onto the lined baking sheets, spacing the scoops 2 to 3 inches apart. Bake until lightly browned, about 11 minutes. Transfer the muffin tops to a rack set over a baking sheet to cool completely. |

I have a muffin top pan, I got it from Amazon, each top comes out to 4" across by 1/2" deep. I love it because the sides of the muffin tops come out a little crispy. I've used it for cookies, brownies, muffins and cupcakes. Today I'm going to try it with banana bread batter.

Update! Make these all the time, but oven is at 350, and I set timer for 15 minutes. I use recipe for banana chocolate chip bread and pumpkin bread.

Pumpkin Bread ½ recipe
½ C. oil 1/3 C. water 1 can pumpkin 2 eggs 1 ½ C. sugar 1 ½ C. flour ½ t. baking powder 1 t. baking soda ½ t. salt ½ t. cloves 1 t. cinnamon ½ t. allspice ½ t. nutmeg Mix wet ingredients in large bowl. Combine dry in another bowl, then mix together. 350° for 30 minutes. (muffin tops for 15 min) To add 1 c. oatmeal, reduce flour to ¾ cup. |
