Another vote for CakeMix Doctor. I have made many of the variations in the book. Every single one of them has been so moist and tasty!
One of the best ones from the book is Blueberry Muffin cake. It's yellow cake with fresh blueberries and yogurt. Oh...and the white chocolate cake with raspberry filling! I could go on and on... |
I wonder if the recipes from the United States using our mixes will work the same with your mixes in Australia? Would be interesting to know. By the way, those from the States who wonder what "slice" is, that's Aussie for what we would call bar cookies. What do they call them in other parts of the world?

HemlockTea ... it's just as simple as you mentioned one box of double layer cake mix (any flavour) one 10 oz. can of soda (regular or diet, any flavour) No-Other-Ingredients! Mix together and bake as per directions on the box. If you want to use the single layer cake mixes ... just use 1/2 can of the soda. Experiment on the combos .... Chocolate and Coke White and orange or cream soda or lime Lemon and 7-UP Spice and Dr. Pepper or Root Beer The possiblities are endless!! *************** Another one One box one step Angel Cake Mix One can pie filling No-Other-Ingredients! Mix together and bake as per package instructions. Remove from oven, and invert as you would the angel cake. Again, combos are endless! Seasonal Now would be ... Rhubarb pie filling!!! Apple Spice ... obviously, use apple pie filling. I like spices, so add more than is in the pie filling. Cherry ... makes for a lovely pink cake with big red cherries in it. Black Forest CAke ... add 1/2 cup bakers cocoa to the mix, then add in cherry pie filling. Trim with whipped cream or cool whip. And on and on and on and on!!!! |

The recipes I gave you in my earlier post ... double cake mix would make a two 9" round layers or a 9x13" cake. I gave our standard soda pop sizess. Cans of pie filling would be 19 oz. ... slightly more or less would probably work just fine. You mentioned a Christmas CAke recipe ... would you please share it with us? Here's a "slice" recipe that I just saw last night. Another possibility ... all the "Mix in a Jar" recipes ... you make up your own mix, then store in a preserving jar, until you want to make it.
The good thing about these are that you have direct control over the ingredients, and then on baking day, use it just like a regular store bought mix. One year for Christmas I did up a case of mason jars, something different in each, for a gift. The recipient was delighted! |

You can make cookies with cake mix too. I have recipe at home - just add some oil, egg, you could google cookies made from cake mixes. Really good and easy.
