This meal is better if you can cook it for 10 hours on low. You can serve a vegetable and a salad with the first two meals or a salad to the last one to make it complete. |
How about some homemade soups. It's getting to be that time of year and soup and pie are always a big hit and pretty economical.

How about quiche. aI like to do casseroles or things that go far for little. Your pork roast would do fine in a stew with rolls and desert.

I vote for soup - Maybe two different ones and a good bread. Here is a good recipe for Vegetable Bean - Ingredients
6 ounces bacon, chopped 1 onion, diced 2 celery stalks, diced 2 small carrots, diced 2 zucchini, diced 1 garlic clove, finely diced 1 (14-ounce) can chopped tomatoes, undrained 2 (15-ounce) cans Great Northern beans, drained and rinsed 3 cups reduced-sodium chicken broth 1/2 teaspoon salt Coarsely ground black pepper 6 cups fresh spinach, chopped 1/4 cup grated Parmigiano Reggiano cheese Instructions 1. Place bacon in a large saucepan over medium heat. Cook 5 minutes or until almost crisp. Add onion, celery and carrot; cook 5 minutes. Add zucchini and garlic; cook 3 minutes. Add tomatoes, beans, broth, salt and pepper. Bring to a boil, reduce heat and simmer 10 minutes. Stir in spinach. Ladle into soup bowls and top with grated cheese. Makes 10 cups. Serves 6. |
Here's the recipe for taco soup:
1 can each pinto, black, red kidney beans 1 can corn 2 cans diced tomatoes - any flavor 1 can Rotel tomatoes - (prefer mild) 1# ground meat 1 pk taco seasoning 1 pk - Hidden Valley ranch DIP (not salad dressing) Brown ground meat, dump everything else in w/o straining. You can chop the tomatoes smaller if you wish. Cook 30-45 minutes or longer. You can have shredded cheese to top it with. Everyone that tries this loves it. Nice hearty and filling soup |

Here is the recipe for the Hearty Meatball Bean Soup...you could make it ahead of time and take it . |
How about chicken noodles? Make your noodles with eggs, flour, salt, and pepper and roll out to let dry till leathery then cut. Store till you're ready to use. Can either have soup or noodle dish. Can serve with carrots for veggie.
Could also make scalloped potatoes and ham with green beans on the side. Spaghetti? |
