Need a Yummy Breakfast Casserole Recipe
I need a easy and good breakfast casserole using sausage and eggs. Any ideas or suggestions would be appreciated.

Hi - some friends of ours make a breakfast pizza that is really good. Basically a refrigerated pizza dough in a can, roll out, add cheese, semi-scrambled eggs (not cooked through), sausage or bacon, any other toppings, bake in the oven. Sorry I don't have a more specific recipe.

My mum makes this when everyone is visiting. It's delicious.
Creamy Breakfast Casserole (Mum’s Recipe) 4oz Butter 6 Tbsn AP Flour 2 Cups Milk 5 Eggs (beaten) ½ Tspn Salt 2 Cups Grated Cheese ½ lb Sausage (or Cooked Ham or Bacon) Heat Butter in a pan; once melted add Flour and make a paste (a rue). Next add the milk. Keep stirring until the mixture starts to thicken (probably about 5 mins on medium heat). Once mixture has cooled add the Meat, cheese, salt, and the eggs. ** can substitue Jimmy Deans Skillets Mix for meat...then it has onions, potatoes, and meat in it.** Spray PAM in casserole (9X12) then pour mixture in and bake at 350 for 45-50 minutes. Can be freezed. |
Spray 9 X 13 baking dish..line bottom with Hash brown patties (squares) ..brown and crumble sausage (any type you like) 2 lbs..or 2 packages..layer over potatoes..whip 8 eggs pour over sausage.. top with grated cheese.. let set in frig over night..bake 350 30-35 mins till bubbly on top!!

Tater Tot Casserole
1 lb. breakfast sausage, cooked and drained (or bacon or canadian bacon) 4 eggs. 2 cups. milk 2 cups shredded cheddar cheese mini tater tots Grease cake pan. Spread sausage over the bottom. Beat eggs and milk and then pour over sausage. Spread cheese next and then top with tater tots. Bake at 400 for about 30-40 minutes. |
I make several breakfast casseroles & this is by far the favorite. It came out of American Profile Sunday Magazine awhile back
Suothwest Oven Omelet 1 4.5 oz can green chilies 16 oz shredded cheese (I use a cheddar/jack blend) 1 lb diced ham 1 12 oz can evaporated milk 8 eggs 2 Tbsp flour Preheat oven to 325. Grease a 9x13 dish. In a medium bowl mix cheese, chilies & ham. Spoon mixture into baking dish. In the same bowl wisk together eggs, evaporated milk, flour, salt & pepper to taste. Pour evenly over cheese mxture & bake for an hour. Yum! The recipe originally called for mushrooms (2 3.9 oz jars). Sometimes I use them , somethimes not depending on who's eating it! I use 8 oz fresh & sauteed if I do use them. I have used cooked sausage or bacon too, but diced ham is so easy! |
I cook my sausage crumbled up then mix up eggs as if I was making scrambled eggs. Then I cut up and stir into the eggs several slices of bread, let it sit for a few minutes then stir in the sausage crumbles. Add salt and pepper (the amount that you want). Pour that into a buttered pan and cook on 350 about 30 minutes or until the eggs aren't gooey when you stick a skewer in. Sprinkle shredded cheese on the top and return to the oven for about 5 or 10 minutes until the cheese has melted.

Brunch Bake..................... Put together the night before serving.
In a greased 9X13 pan layer: 7 slices of bread with crusts cut off 1 slice of American cheese on each slice of bread 1 cup of cubed ham 4 slices of bacon, fried, drained and crumbled 1/2 roll Jimmy Dean sausage, fried,drained and crumbled (approx. 3/4 cup) diced onion to taste diced green pepper to taste 1 cup shredded cheddar cheese another layer 7 slices bread, no crusts Mix together and pour over bread layer: 1/4 tsp each... salt and pepper 1/2 tsp dry mustard 6 eggs 4 cups milk Cover pan in foil and refrigerate overnight. The next morning take out of fridge. Combine: 1 cup crushed cornflakes 6 Tbsp. melted butter or margerine Spread over bread layer. Bake uncovered 1 hour at 350 degrees. Cut and serve. Great for brunch on Christmas morning or when company comes. |
