Caterer, or if you have a warehouse store like Sam's, Costco or BJs (don't know what's in your area) they have lots of prepared foods that would work great. Some don't need a chafing dish.

Or does everyone look forward to food you have prepared yourself?

One of our favorites is a marinated veggie recipe. Can be done one or two days in advance. Maybe I should say that it 'should' be done ahead!

Shrimp, chilled, pickled, spicy, etc.
Miniature quiche
hot dips such as spinach-artichoke or crab with chips or crackers
miniature egg rolls with a sauce
deviled eggs

I changed things up this year. Instead of meatballs, I went with two kinds of wings - spicy and plain. Also my daughter (mother of 4 small children) suggested mac & cheese. All was put into crock pots to keep warm. I also had the traditional buffet type foods. Guess what crock pots got emptied first? Yup - the mac & cheese and the "hot" wings.
One of the Grandkids said "Grandma - this is the best". Enough said.

I was going to say the BBQ lil' Smokies, I have a chili dip recipe is made in a crock pot--no reason can't be switched to a warming dish for serving. I also have an Italian meatball recipe from my girlfriends Italian grandmother, that maybe you could reduce to bite size and serve with bite size garlic bread pieces. Crab rangoons

Again--Your horse is gorgeous! My mare is 27 yrs. old I have had her since birth and she is doing super for being a "senior senior".

Veggie pizza---yum!!! Served cold...so no worry about heating it up.
