My dad made pepper sauce growing up, he used the tiny hot peppers and dropped them in a steak sauce jar of vinegar. The pepper hotness soaked into the vinegar and it was great on turnip greens. But he didn't eat the peppers. Just changed them out when they lost their heat.

Clay, here is the recipe we used. Hope you like it! I just used some of the peppers and juice mixed with mayo to make brocolli slaw for dinner. Should be great by the time the flavors meld together.

Toverly, in the south that's known as peppa sauce! My mother always had a bottle on the dinner/dinna table!

Pickling hot peppers

so I guess no one uses or has heard of pickling salt

SuzzyQ 11-06-2015 05:46 PM

pickly salt is just pure crystallized salt. You may also use Kosher salt. Neither has iodine in it as Iodized table salt does. Keep looking. The iodine is what ruins the pickles.

I always keep the pickle juice after pickles (store bought) are gone. Drop in hard boiled eggs or steamed brussel sprouts. Leave them a week. Slice the sprouts on top of a lettuce salad and the eggs can be used many ways, including potato salad.
