Pickling Hot Peppers
 
We have never canned peppers. Found some online on how to do it. Have a question about it. Do you have to use a canning jar? After putting in the brine do you have to do what I heard of asuch a hot bath? We have a big pickle jar we wanted to use.

Follow the procedures for canning they are done that way for health reasons not just to be a pita. When handling hot peppers, DO NOT TOUCH YOUR NOSE OR EYES, YOU WILL HAVE A BAD DAY. Don't ask me how I know. I wear disposable gloves now.

We have some pppers in the freezer. Would it be ok to pickle them?

I haven't ever used any frozen product to pickle or can, sorry. I'm sure that if we keep this thread towards the top of the board, that there is someone with experience in that, if it's possible.

We just pickled some jalepeno peppers from the garden. Jalepenos seemed to have a bumper crop here in Georgia! I found a recipe on the internet that used vinegar, kosher salt, water, garlic and peppers. It was yummy! I used some jars we happened to have on hand. After completing the recipe you keep them in the fridge to use. There are also recipes that involved using canning jars and putting the jars in a water bath to process and seal. Since my husband is a health inspector (and he actually did these!) I feel confident regarding their safety!

Thanks for the comments Kaye. The ones that you keep in the fridge have a different process than the ones that you use a regular canning jar for and put in a hot bath to seal the cans, right?

Would you like to share the recipe for the ones that you don't do a hot bath and put in canning jars?

the recipe I saw called for pickling SALT. I never heard of pickling SALT. and when I went looking I couldn't find it either. the internet said it helps keep the peppers from turning black.

Frozen peppers are not going to have the texture that fresh peppers do. As pickles they will be mush.
