1 lb cooked medium shells/pasta
1 or 2 pints of pot cheese or cottage cheese that has been placed in a sieve for 10-15 minutes to remove some liquid.
1 stick of butter
salt and pepper

Cook pasta/noodles- drain- do not rinse
add butter to coat the pasta/noodles
add the pot cheese or cottage cheese
mixing well so that the cheese is well distributed
season to taste. Serve hot. This also reheats well.

I have added cooked peas (frozen not canned) to this with good results. chopped chives as well.

I had never heard this term before, pot cheese. Oh, the funny things that my head thought of for possibilities!

I suppose I'm the only one who didn't know, but just in case there is someone else:

Pot cheese is a curded cheese like cottage cheese but not as moist. the only commercial brand that I know that makes Pot cheese is Friendship Farms--and that might only be on the east coast. Local ethnic grocerery stores can get Pot cheese by the 5 lb tub from their purveyors(wholesalers).
