I am looking for a receipe for Potato Pie - not sweet potato pie. My mother, who has now passed away, used to use cold boiled potatoes and I don't know what - spread them out on a edged cookie sheet and bake - would love to have the receipe for that - have looked through her cookbooks and all of mine and cannot find anything. I tried one that added sugar and milk, wasn't a match. My mother was 100% Finnish if that helps at all. Someone must have eaten this at one time or other - thanks in advance for any help you can give me.

I've never heard of a potato pie (other than sweet potato), but I still make my great-grandmother's potato candy at C'mas. My family likes to eat it, but we also like to bluff others into guessing what it is made from.

could you share that recipe?

My Grandma used to make potato candy when I was little. You boil a small potato and drain it well. Mash with a fork and stir in enough powdered sugar to make a stiff dough. Roll out like pie crust and spread a good layer of peanut butter on it then roll up like a log. let stand for a little while then slice crosswise into pinwheels. You would never guess it was made with a potato. It was always a big treat for us when we were kids. Hope you all enjoy!!
