Rhubarb Cake
 
This cake is really good

2 cups white sugar
1 egg
1 tsp. vanilla
1 tsp soda
1/2 cup butter
1 cup milk(2 tbsp. vinegar or lemon juice
2 cups flour
2 cups fresh rhubarb

Beat first 5 ingredients till creamy
Add flour, add rhubarb

Pour into 9 x 12 pan
Mix 1/2 cup sugar & tsp cinnamon. Sprinkle on top

Bake 350 oven till done, test with toothpick

Similar to my recipe and I have made 2 rhubarb cakes already this spring and will be making another for this weekend. Soon my rhubarb will be going to seed.

Thanks, DH loves rhubarb and I paid a high price for enough to make him a cake tomorrow. It is not cheep here in FL. My mother used to grow it when we lived in Buffalo, NY

I break off the stalk with the seed and can use the rhubarb for a longer time.

This is another dump cake recipe that I love--have made it three times this month
put 3-4 cups of cut rhubarb in a 9 inch cake pan with 1/2 cup sugar
sprinkle a small package of dry strawberry or raspberry Jello over top
sprinkle a Jiffy brand yellow cake mix (dry) over top of Jello
pour 3/4 cup of water over top of cake mix
melt and pour 1/4 butter over top
Bake 1 hour at 350 degrees (may need an extra 15 minutes to make sure cake is done and lightly browned)
Let cool to room temperature so Jello firms up a little.

You can make this in a 9 by 13 pan using 4-5 cups rhubarb, 3/4 cup sugar, large cake mix, 1 cup water and 1/2 cup melted butter.
