Anyone have any suggestion as to what to do with rubarb? I didn't care the pie that was made with it but have lot that I could use for something?

I make rhubarb crisp with lots of sugar and serve it with ice cream or whipped topping. There is never any left over.

My grandmother used to make Rhubarb Strawberry Pie. It was YUMMY!!!! You can send it here! Mom likes to just eat it raw. We'll take all we can get! LOL

My favorite was to have it cooked with sugar and tapioca for thickening, then we ate it cold, over hot buttered toast or biscuits. Delicious!!

I have soooo much rhubarb! This year I've made refrigerator jam (strawberry rhubarb and apricot rhubarb), rhubarb crisp, rhubarb pie, rhubarb ketchup, and I'm trying a batch of rhubarb wine. I also saw a recipe for rhubarb pickles but haven't tried that yet.

I also live in Northern Minnesota, and we had an overabudance of rhubarb this year. We were going to try and make some wine, but never got around to it. Do you have a recipe for the wine that you'd be willing to share?
Since I have Celiac Disease I don't make as many baked goods as I used to, but I did manage to find a really good rhubard crisp recipe.

Yes, sure ... this is from a book called The Joy of Rhubarb by Theresa Millang.

RHUBARB WINE
8 lb. fresh rhubarb, cut into small pieces
8 quarts boiling water
6 lbs. granulated sugar
2 12 oz. pkgs seedless raisins
4 fresh lemons, sliced
4 fresh oranges, sliced
2 yeast cakes

Place rhubarb in a large sterilized crock. Pour boiling water over rhubarb. Cover and let stand one week, stirring well each day. At the end of the week, strain, and add sugar, raisins, lemons, oranges and crumbled yeast cakes to the liquid (I couldn't find yeast cakes, I just used the little packets). Let stand until it stops working, approx. four weeks (Could be less if weather is warm.) Strain through several thicknesses of cheesecloth. Bottle and keep in a cool place.

I started the wine in a 5 gallon plastic pickle pail so it would be easier to strain the rhubarb. Then I put it into the crock. I haven't finished this batch yet, it should be done next week. I've never made this before so I'm hoping it turns out ok. Good luck with yours!

About the only way I'll eat rhubarb is in a rhubarb bread...

Ingredients:
1 1/2 c diced raw rhubarb
1 1/2 c brown sugar
2/3 c. oil
1 egg slightly beaten
1 c. sour milk
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. soda
1/2 c. chopped walnuts
pinch cinnamonProcedure:
Topping- 1/3 c. granulated sugar mixed with 1 Tbsp. melted butter.

Mix brown sugar, oil, & egg together. Sift salt, soda, flour & cinnamon together. Add dry ingredients alternately with milk to other mixture. Fold in rhubarb and nuts. Fill 2 lightly greased loaf pans 2/3 full. Sprinkle with topping. Bake at 325 for 1 hour.

Yikes - not compost... please! I'd give my eye teeth for some rhubarb right now. It's SO expensive, and is in the grocery stores such a short time every year. Many of them don't even order it! Arrrrggggg! Friends, Romans, and Countrymen... send me your rhubarb! <G>

My husband loves stewed rhubarb with raisins. It is delicious cold with toast. or as a topping for ice cream or cake. Just simmer rhubarb in a bit of water and sugar to taste and raisins. Simmer and add more water if necessary. good luck with the rhubarb.

My family always made rhubarb upside down cake. My mom uses a white cake mix,brown sugar, and I think some white sugar also.
Make the cake as the box calls for it.
Cut the rhubarb into pieces.
Grease or oil your pan as the box says.
Put the rhubarb on the bottom, then some brown sugar and some white sugar.
Then pour your cake mix over the rhubarb. And cook as
directed.
Let it cool and add cool whip or pour milk over it and enjoy.
It may not sound like milk would be good over it but I think it is good. I also put milk over my chocolate cake.

I will check with my mom I do believe you use both sugars not very much mind you. But I want to make sure I am giving you the correct directions. I think I will be getting some rhubard this weekend. That sounds so good.

Sometimes I just cook chopped up rhubarb in a small amount of water until very tender. Add sugar as desired and a touch of salt (helps with tartness). I love it over ice cream or just the rhubarb. I do this when I don't want to bake pie or crisp. I also love the cake--either added to white cake mix or upside down.

Forgot--Rhubarb refidgerator jam is good.

My mom use to find it growing wild and cook it up .It was slimy. Years ago while visiting my husband aunt, she had made a strawberry-rhubarb pie. That was good.

the most wonderful smell in the world...freshly mowed rhubarb. used to drive my neighbor nuts!!! ...it can get out of control...and sometimes you just can't get it all eaten and baked up...

I think rhubarb crisp is like a crumble & I also made rhubarb & stawberry bars!! Diet is on hold til everything is eaten!!: ))

Rhubarb Dessert
Crust:
1 c. flour
1/2 c. butter
2 tblsp. sugar
Filling:
1 1/2 c. sugar
2 tblsp. flour
1/2 c. cream
3 egg yolks
1/2 tsp. salt
2 1/2 c. rhubarb
Meringue
3 egg whites, whipped
6 tblsp. sugar
Combine first 3 ingredients to form crust. Pat into 8X8X2 pan and bake for 15 min. at 350.
Combine filling ingredients and pour over crust. Bake for 45 min.
Top with meringue and bake until lightly browned.

Rhubarb Nut Bread
1 1/2 c. brown sugar
2/3 c. cooking oil
1 egg
1 c. buttermilk
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. rhubarb, diced
1/2 c. nuts, chopped
1/2 c. sugar
1/2 tsp. cinnamon
1 tsp. butter
Combine first 10 ingredients. Pour into 2 greased 9X5 loaf pans. Blend sugar, cinnamon and butter. Sprinkle over batter. Bake at 325 for 60 min. Do not overbake.

Rhubarb Raspberry Dessert
Crust:
1 1/4 c. flour
1 tblsp. sugar
1/2 tsp. salt
1 tsp. baking powder
1/4 lb. butter
1 egg
3 c. finely cut rhubarb
1 3 oz pkg. raspberry flavored gelatin
Topping
1 c. sugar
1/2 c. flour
3 tblsp. butter
Mix first 6 ingredients together for crust and pat into a 9" square pan. Arrange fruit on crust and sprinkle dry gelatin over the fruit. Crumble the topping ingredients together and sprinkle the topping over the fruit. Bake at 350 until fruit is tender and topping is lightly browned, about 45 minutes. 9 to 12 servings.

You should freeze rhubarb in the amount of cups that you need to make the bars, cakes or breads.

karen, haha, compost for rhubarb ? Oh my, a shock to my system, because at the moment, I am sitting here with my coffee, and a slice of homeamde sourdough toast slathered generously with my homemade strawberry/rhubarb jam! SOOOO good. lol, thanks for the laughter, as it reminded me to take our our compost container to our bin out back this morning.. Gotta love living in the mountains here - so many berries to go pick ( especially huckleberries!), and rhubarb to cut each summer.. :thumbup:

I am so jealous of y'all thAt have access to rubarb. all we have in Texas are peaches and Blackberries. I had a piece of strawberry/rubard pie in Alaska and I loved it. we can't even buy it in the store here,not even froze . I'm not sure I even mow how to spell it.
