Sante Fe Cheese Soup
 
Santa Fe Cheese Soup
1 can whole kernel corn, drained
1 can Pinto beans, drained
14 oz can chicken broth (can be more)
1 can Rotel with chili’s (original or other)
1 can white chunk chicken 4 oz.
1 can chopped or diced green chili’s
3/4 lb Velveeta cheese, sliced thin

combine all in crockpot - low setting for 3 hours. Stir occasionally. Garnish w/tortilla chips coarsely crushed & sour cream. ( Doesn’t get easier than this )

This sounds pretty similar to a Taco Soup recipe I got from a local TV program. This one used browned ground beef rather than chicken, and sour cream in the soup. It is really yummy.
