Sheet pan meals
 

Broccoli & cauliflower buds
halved Brussels sprouts
sweet potato & rutabagas sticks
onion chunks all shaken in a lidded plastic container with seasoning, olive oil and a bit of balsamic vinegar.
Spread out on a sheet pan lined with parchment paper. Bake for 20-25 minutes at 375.
If I have asparagus I add later since it needs shorter time
Making this tonight & adding precooked meatballs

Been tossing in spices and olive oil, then spread out single layer on cookie. 375 for 20-30 minutes, depending on size of pieces.

• whole okra
• cubed squash
• halved baby carrots
• peeled, sliced eggplant
• sliced mushrooms and onions
• any vegetable on hand

I roast veggies frequently. Even tried radishes and they were pretty good!

We have roasted veggies all the time. Roasted Brussel sprouts are a family favorite. Even the grandkids love them, score one for G-Ma!!

I like all kinds of roasted veggies, but DH will only eat roasted potatoes and carrots.
