So what is cooking for Easter at your house?

Anyone eating a none traditional Easter meal? What is a traditional Easter meal if you eat that? My oven is still broke so I imagine it will be a real simple Easter meal and or something in a crock pot. My friend suggest eat the ham cold and make ham sandwiches. I am leaning towards chicken soup and fresh white bread. As dessert I am picturing lots of ice cream and maybe one of my married DDs will bring home baked goodies.

A smoked ham is on our menu. It is pre-cooked and I put it into the oven in a roasting pan for about an hour. You could do the same in your crock pot I would think. We have sweet potatoes as veg. And probably a green salad. I am thinking honeymoon salad for dessert. I am also thinking of doing bird nests for a treat.
I saw it on facebook where you use 1pkg. chow mein noodles, 1/2 cup peanut butter mixed with 1lb. melted chocolate wafers that you drop onto a cookie sheet or into mini muffin cups and put in 3 Cadbury candy coated tiny eggs on the nests. You put them in the fridge to set.

Sounds yummy! Yes, warm ham sounds a lot better to me. I already researched some ham crock pot recipes online. So far many of them seem a bit sugary but maybe I can substitute other flavors and liquids. Thanks for mentioning the bird's nest dessert. Sounds very cute and I do not need an oven. I will need to research the honeymoon salad dessert to see what that is.

Since we're no longer around family, I imagine we'll eat out. I miss all those family / relative get-togethers.

We call it honeymoon salad some people call it 5 cup salad? It is the one where you use a container of sour cream, 2 cans of drained pineapple chunks, 2 cans of drained mandarin orange slices, 2 small packages of shredded coconut and half a bag of mini white marshmallows. I keep the pineapple juice to add a little into the mixture at the end. I like it a bit soupy to go into the fridge as the marshmallows soak up the juice. If this seems like a big batch, it IS! There is no use making a small batch as it goes so quickly at our house.

I have two daughters. One is 250 miles away and can't make it home due to work responsibilities; the other is 30 minutes away and extremely diet conscious. Only other family is in Florida so Easter Dinner will be non-traditional. A big salad, asparagus, yellow squash, yams and a roast. Dessert is most likely going to be angel food cake with assorted berries. Lost my dad four months ago, so the holidays are feeling quite empty.

quiltstringz 03-29-2015 05:05 AM

I have heated ham in my crockpot numerous times. I don't think I even added any water.

I do ham rolls in the crock all the time. Yes, there are lots of add-ins that can be done, but I find that some water is all that is needed. The ham has enough of its own flavour, that no more is needed IMHO! Plus, I have found than many of them change the colour of the ham ... orange juice, pineapple, maple syrup, brown sugar with mustard, are some I have tried, and then gone back to plain old water! :)

I'm not sure what your traditional meal would be, but often with ham is scalloped potatoes. You can do quite respectable ones in the crock pot too. Then of course, the microwave would zap your veggies in short order, or do on the stove top.

No over does not mean you have to miss your traditional Easter Dinner. ENJOY your meal ... and more so, your time with your family.

As for me ... My Easter dinner was this week when a friend was here! Yes, ham and scallopeds. Though I did do the potatoes in the oven. Have frozen some single portion dinners from the leftovers. So that just might be my Easter Dinner as I will be home alone ...... and happy for it, as hopefully I will be doing some quilting! :)

Roasted turkey, baked sweet potatoes popped open & served with a pat of butter & sprinkled with brown sugar, fresh green beans cooked with streak-o-lean meat, deviled eggs, cornbread and yeast rolls, sweet tea. Desert will be strawberry shortcake made with Big Momma's sour cream pound cake, fresh strawberries and freshly made whipped cream. :)

Going to my daughter's this year. Her dog had surgery and she needs to stay close by for the dog. She will have ham, scalloped potatoes, green bean casserole, butternut squash casserole, homemade yeast rolls. cherry pie, strawberry pretzel salad. I will make the ham and casseroles for her.

rjwilder 03-29-2015 07:16 AM

We are having cereal and fruit for breakfast. Church next and then back home for brunch, omelette bar, hash browns, bagels, muffins, juice, and coffee.

OCquilter 03-29-2015 07:47 AM

The first time I heated a fully cooked ham, I didn't read the directions on the time per pound and waited too long to do it in the oven. I microwaved it and it was one of the best hams I ever made.

lynnie 03-29-2015 07:48 AM

being my husband is Jewish and Passover is the day before Easter, i'm making brisket with potatoes and carrots.

Latrinka 03-29-2015 08:37 AM

I am so sorry to hear your dad passed away. I hope you will still have a good Easter. )))Hugs(((
All the vegies do seem yummy to me. I might just splurge and get asparagus too. Daughter in law likes them and she is the picky eater.

You got me in stitches. That sounds so easy. Our "big" microwave is broke too but we have a small one. I could just microwave as we go along with the meal. Great idea and it is tested. I would have been scared it would be dry from microwaving.

An extended big breakfast. That could work! I think all the picky eaters might like that too. I might run that by the family.

I am sorry to hear you miss it but I am glad you shared your feelings. It will remind me to be grateful for this time in our life, when at times I can feel overwhelmed with everyone always coming to my place.

Annaquilts 03-29-2015 09:30 AM

Everyone is making my mouth water. Thanks to Quilte for giving a heads up on just plopping the ham in the crock pot and adding only a little water. Between everyone's likes and dislikes plus allergies this might be one of the better options for us.

............... and oh so easy! And the scalloped potatoes are just about as easy too. Just a little more work, being that you have to peel them first! :)

And that is what is SO important ... easy food, so there is lots of time for the people, the MOST important of any gathering!!!!! ENJOY!!!

Cam's gram 03-29-2015 12:36 PM

We're having baked (glazed) ham, baked beans, candied yams, hash brown potato casserole (a must have for dgd), 7 layer salad, green beans w/mushrooms, rolls, two kinds of pie and Easter decorated cutout cookies. I decorated them today and will freeze them. I usually have two appetizers for everyone to munch on till dinner's ready. Sending a couple dozen cookies home this week with my best friend. Her kids love them and she has out of town guests staying with four kids. A lot of it can be done the day before and DH helps with the cooking so it's really not bad at all. Plus I buy the pies at a wonderful bakery.

madamekelly 03-29-2015 12:37 PM

I have been requested to make what our family calls "Foam". It takes 1 small tub of sour cream, one small tub of whipped cream, and one small tub of cottage cheese. This is where the fun starts. Chose a flavor of Jello in a small box, and fruit to complement the Jello. Blend all in a large non metal bowl, pour into pretty serving bowl and refrigerate for at least a couple hours. We like orange jello with mandarin orange segments, lime jello with pineapple, peach jello with chopped canned peaches, berry jello with fresh beries, (but if you use berries be sure to stir everything else together first so as not to smash the berries, then gently fold in the berries.) you can add about two cups of drained or chopped fruit, or coconut. I hope to find apple Jello this year and add chopped apples and cinnamon. New idea, wish me luck....lol!

coopah 03-29-2015 12:38 PM

We're having ham, corn, green beans with bacon, rolls, smashed spuds, cole slaw, and lemon pie for dessert...there are only 3 of us and we let Bob Evans cook! We'll reheat it at home. I'll also make a pecan pie. Gotta have the pecan pie!

Latrinka 03-29-2015 04:02 PM

Awe, I just love this thread, love to see what everybodys different traditions are, so neat! Does make me hungry too! Good luck to everyone trying different recipes, condolences to those celebrating the "first" holiday with someone missing, know what thats like, will be the 4th one for me without my other half and still having tough time. Probably wont get to have crawfish boil, but will have family with me, and in the end, that is all that really matters! Hoppy Easter Everyone!

sailsablazin 03-29-2015 04:58 PM

When our oven had to be replaced I prepared a Christmas dinner for 10 in my roasters and crock pots. Cheesy potatoes, ham, green bean casserole (crock pot), rolls, desserts. Getting hungry just typing.

Caswews 03-29-2015 06:51 PM

Absolutely nothing !! We are probably going out for a meal (lunch time meal). But its just another day for us !

solstice3 03-29-2015 07:38 PM

My vote is for Cracker Barrel or some place else that does all the work.. It's not as much fun just cooking for 2

adamae 03-29-2015 08:45 PM

DIL provides the meal and it will probably be from Fresh market or something else as she does not like to cook. Looking forward to it as I will get to see the little Gret grandson. I think sh e will serve ham, green bean casserole, corn soufflé, deviled eggs, potatoes, and apple pie or maybe cupcakes.

Jo Belmont 03-29-2015 09:05 PM

We do a "Request" dinner for Easter. Lots of family and non-family invited and the "requested" buffet (it doesn't go together, but it works for everyone who attends) it's sliced baked ham with the pineapple rings and cherries on the side, green bean casserole, potato salad with lots of eggs and dill seasoning, homemade biscuits with real butter and honey, chicken cacciatore with lots of green pepper and onions in garlic marinara sauce with linguini (we always to Italian at any family gathering), and the traditional Easter Lamb Cake set atop palms (if we can find enough) and backup cake in the same lemon-coconut flavor, plus our favorite fresh fruit salad set in vanilla yogurt. Lots of food and lots of people, each with their request met. We usually have a fresh veggie tray with a yummy sour cream ranch dip. It's a lot of preparation, much of it's ahead of time, but so much fun. Of course, there's an abundance of wine (red and white) to complement the menu choices. It's our best day of the year. HE IS RISEN! HE IS RISEN INDEED!

Sandygirl 03-30-2015 02:36 AM

Cracker Barrel. Our "tradition". It is just the 2 of us. We are ok with it.

Sandy

nancyw 03-30-2015 04:22 AM

We're having leg of lamb , red potatoes and I don't know what else. Maybe green bean casserole. We're not too big on deserts so there probably won't be one.

starshine 03-30-2015 10:19 AM

Not sure if we are getting together this year, not sure who will be in town, one daughter and hubby are vegan, married son avoids red meats, but eats others, his wife is almost vegetarian, and their daughter is only 20 months, I usually have some ham for anyone who would want it and take it if we go to one of the kids houses. I have always left dessert to the chocolate and candy in the baskets. :p And if everyone is going out of town maybe we will check out a restaurant and start a new tradition.

nwm50 03-30-2015 10:33 AM

Tartan....5 cup salad is POPULAR in our household for any gatherings! Lol
I like Ham, potatoes salad, green beans with taters in it, sweet bake taters, collared greens, farm corn, cornbread or beer bread, omg, I'm getting hungry now!! This list can go on and on with our food list....maybe we'll eat at Applebee's this year since we're a very much smaller family...kids eat free with paying adults.

nygal 03-30-2015 11:03 AM

One thing on our menu is Scottish Eggs. We love them. Takes a long time to smoke them but it's worth the wait.

quiltybarb 03-30-2015 01:07 PM

Unfortunately, we go to my husbands family on Easter,,,,the menu is prosetto and salami on a big plate....then they have what they call pizza which is actually a big round cheese bread, dry on the outside and mushy on the inside.....The first year I went I had to stop at McDonalds because I was so hungry when we left.....I now bring deviled eggs and tomato slices with provolone and Italian dressing and someone else started bringing a ham. They've never, ever had mashed potatoes or rolls at any meal.....boy the sacrifices I made for love LOL

Mommomjoann 03-30-2015 07:12 PM

I'm tired of cooking!!! Husband said " we're going to the Borgata Buffet in Atlantic City". Went there for Thanksgiving…it was wonderful… no dishes…just walk away when finished dinner . Happy Easter!!!!

Doggramma 03-30-2015 07:47 PM

We're heading to a buffet at 9 AM. It will be mainly breakfast-type foods.
