This is my other passion, baking, well in this case it's frying. My wonderful MIL makes these and she has graciously given me her recipe. This is not a quick dessert, but it is so worth all the trouble. I start the day before by doing a little prep, peeling the apples and faux- drying them. What is faux drying you ask, well.. it's simple really. Peel a 3 pound bag of apples; yellow delicious, Fiji , Gala or a mixture.Dice and then stir in 1 cup of sugar or substitute and 1 T. of vinegar, cover and let set out overnight( refrigerate if using substitute), stirring occasionally. I also make my dough the night before.
The next morning mix:
2- T cornstarch and 1/8 cup water together. cut up half a stick of butter , add to apples and cook in micorwave for approx 15 to 20 minutes. Allow to cool to room temp or chill in fridge.

Fried Pie Dough
5- cups of all-purpose flour
3- eggs
1- can (12oz) of Evaporated milk * Note* not condensed milk
3/4 - cup of shortning
A pinch of salt
Oil for frying

Cut shortning into flour in large bowl, set aside, wisk Evap. milk and eggs & salt together, . Make a well in center of flour mixture, add milk and egg mix. Fold from sides to middle until it turns away from the sides , cover and chill.

Whew, tired yet? Well, keep going , I'm telling you its worth it!

The next day roll out your dough( I use a heavy marble rolling pin)very thin, where you can almost see thru it. About the same thickness as 5 sheets of copier paper. Decide your size, I use the lid to my tea maker to cut it out. Place desired amount of apples off center slightly, brush half of dough edge with water, fold over and crimp with a fork dipped in flour. Fry at 350 degrees till golden brown. I use an eletric skillet with about 1 1/2 inches of oil. Stand back while they disappear! Some folks at church will just about take your arm off for them. And the teachers love me, when I leave goodie bags in their cubbies at school. Enjoy!

Sorry it is so long.

Sounds yummy

terry leffler 09-16-2011 03:15 PM

for shortening do you use margarine or Crisco?

KS quilter 09-16-2011 03:30 PM

Thanks for the recipe. I make a lot of pies, but have never
triedd the fried pies. I have found anything you make that
is time consuming is usually well worth it. I'm anxious to
make them.

rsmomx3 09-16-2011 03:34 PM

My MIL and my husband use to make these all the time. Needless to say I could never get enough. They have both passed away and I had forgotten about the fried pies and how much I loved them. I am so glad you posted the directions.Thank You

ncredbird 09-16-2011 05:19 PM

A couple of questions. And yes, I know they wouldn't be "fried" pies but have you ever tried baking these? If so with what results?
Ever add any cinnamon to the filling?
My DH loves fried pies but asked if they could be baked instead.

Yes, they bake up very nicely, just turn them so that both sides get nice and brown.  Yes, another thing I forgot to add,it is optional though. I use 1/4 teaspoon to the 3lb. bag of apples.

I use Crisco, there is also a butter flavored . With real butter , its fries up a little different, I have used both together in a batch, came out nice too.

amazon 09-16-2011 06:45 PM

So glad that everyone is enjoying this recipe. I want to add that any filling works great. Over the years I have tried all kinds. Some of my favorites are cinnamon, chocolate, sweet potato, strawberry , fig and blueberry. I have even made pecan pie fried pies , yummy but oh, so rich. I guess the skies the limit or as we say whatever melts your butter. I fried another 30 today(apple & cinnamon) and made chocolate oatmeal no-bake cookies for my DD's teachers and Principal and office staff.Next week I'm making Honeybun cake for my boys teachers and office staff.I love this time of year for both baking and of course quilting. Happy baking, frying

mzmama 09-16-2011 07:44 PM

Oh, does this bring back memories. My Mother use to make fried pies with the apples from the tree next to our house.

ncredbird 09-17-2011 02:34 AM

Can you please post your recipe for the sweet potato filling? We have a bumper crop this year and I am always looking for ways to use them.
Thanks, Ann in TN

purplemem 09-17-2011 09:42 AM

I'd like to know the chocolate filling.

My dear gm used to make these with the apricot or peach filling, then she would make the chocolate ones for me.

I know she used cocoa, sugar and evaporated milk. I don't know what else...Can anybody help me there?

btiny36 09-17-2011 10:17 AM

Could you use canned fruit filling...Someone gave me a few cans and don't know what to do with them?

carhop 09-17-2011 11:38 AM

My mother use to make them only she saved bacon greese to fry them she got the recipe in SD in the 50's

Sounds and looks so Goooooooooood!!! I went apple picking Friday at a local farm in Mass. I picket twenty pounds of apples. After my DH and I finishes my "Homestyle Apple Pie" which has three pounds of apples and one cup chopped dried apricots, I'll try the fried apple pie.
