Anyone have a good recipe for spinach?

I honestly LOVE it raw. I add some nuts, berries or pineapple if I am lucky eough to have any, and raspberry vinegrette! Yum!

My EX Mil used to just stir fry it and eat with sweet and sour too, but I dont really like it cooked!

This sounds good, especially the pineapple! I'll have to give it a try. I usually have cooked spinach with vinegar.

I have a really good spinach feta cheese quiche recipe...if that interests you let me know...I can't move right now...on the couch with my laptop and dog and cat on top of me...but will post later or tomorrow if you want the recipe.

Fry some onions and garlic in good olive oil, add spinach and cook briefly just til limp. Yum!

I just did it the way ptquilts did only didn't add onion. It was good. JI'll have to try with onions next time.

I love fresh spinach. I pile it on sandwiches in place of lettuce. I love an omelette made with fresh spinsch, mushroom, onions and bacon and provolone cheese.

spinach casserole- that my kids love(all 5)

1box chopped spinach ( thaw and squeeze out water)
1 small container of cottage cheese (small curd best)
3 eggs
small bag of grated sharp or extra sharp chedder (or do your own apx 8 oz)

Mix together and bake circular pyrex ring or bunt pan or pyrex bowl with smaller pyrex set in larger bowl to make a ring. bake at 350 for apx 30 min
0r microwave (not bunt pan) apx 18 min or until firm

Spinach dip! I follow the recipe on the Knorr Vegetable Soup package and we eat it with Hawaiian Bread. We don`t always make the "bowl", sometimes just tear up the Hawaiian rolls and use them, or cut up fresh vegetables and use them to "dip" with.

This says not to use fresh spinach but I`ve only used the frozen in winter when fresh wasn`t available.

We like creamed spinach.Thaw 2 boxes of chopped spinach & squeeze dry.Heat 1C milk, add spinach.Add 1 tbl cool water to 2 Tbl corn starch, stir then add to spinach.Add more milk till it's as thick as you like. Add 1Tbl butter with S&P.
Some ppl add cheese or nutmeg, but we prefer it plain.

Oh, heavens, I just finished eating my pasty and stuffing myself on it too as I haven't made one for a long time, so I have no right nor reason for drooling, except that I also love spinach both fresh and wilted and I could almost smell it reading your post.

I fry my spinach in a lil olive oil and red wine vinegar with onions and a touch of nutmeg. then add feta cheese.

I love spinach too and use fresh when I make Naan Bread veggie pizza. Use Naan Bread base, cover with spinach, red onions, diced tomatoes, galic, sliced roast red peppers and aptichoke hearts. Sprinkle with a little oilve oil and top with fresh grates Parmesan Cheese. BAke in 400 drgeee oven for 13-17 min. depending on oven.

I also make enchiladas with drained frozen spinach, mexican cheese and diced opnions, s & p. Fill tortillas, place in 9x13 pan, with enchillada sauce under tortillas and over the top. Cover enchiladas with more grated mexican cheese, sliced black olives. Bake at 375 for 20-25 min. until bubbly and cheese is melted. Top with sour cream and sliced green onions.

This is a great spinach salad:

1 bag baby spinach
2 cups sliced mushrooms
1 small red onion sliced
1 can mandarin oranges
10 slices bacon, cooked and crumbled

½ c balsamic vinegar
¼ cup oil
2 Tbls sugar
juice of 1 lemon
2 to 3 garlic cloves minced
salt and pepper to taste

Spinach
sliced tomato
mozzarella cheese.
Put all in a pie plate with the cheese on top of course. Place in oven until cheese melts and is slightly bubbly. Drizzle on a bit of olive oil and balsamic vinegar add salt & pepper and you have a feast. You will be amazed at how good this is. =)

It was really good! We used 3 full cups of spinach and decided to actually double the spinach next time. Yum!

I have just placed spinach leaves in a saucepan with no water (plenty of water in the leaves), cooked until it was wilted, added real butter and garlic, cook a little more and it's delicious.

One my DH and I like
2-cans of cannellini beans[ drained and washed]
2-3 pkg. of chicken broth[ or use cans-2 cans]
4-strips of bacon
1/2 onion
fresh spinach

take bacon, cut up and saute then add the onions...cook till carmelized... 1-tsp of garlic
pour in beans and broth....simmer 15 min.
then put in 2-3 handfuls of fresh spinach
simmer 5 min. serve with crusty bread and salad
we have a meatless nite 1-2 nites a week....

I have a couple. One is from an old Bisquick Cookbook: Impossible Spinach Pie
10 oz frozen spinach, thawed and drained
1 cup shredded Swiss cheese
1/2 cup chopped onion
1-1/2 cups milk
3 eggs
3/4 cup Bisquick Baking Mix
1 tsp salt
1/4 tsp pepper
1/4 tsp ground nutmet
Heat oven to 400 degrees. Grease pie plate, 10x1-1/2". Mix spinach, cheese and onion in plate. Beat remaining ingredients until smooth. 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes. Makes 6 servings.

The 2nd recipe is from 1968 Edition of BHG New Cookbook: Spinach Elegante
2-10 oz packages frozen chopped spinach
3 slices bacon, cooked and crumbled
6 oz sliced mushrooms, drained
1/4 tsp dried marjoram, crushed
1 cup dairy sour cream
1/2 cup shredded cheese
Cook spinach according to package directions. Drain well; spread on bottom of 10x6x1-1/2" baking dish. Arrange bacon and mushrooms over spinach. Sprinkle with pepper and marjoram. Bake at 325 degrees for 15 minuts. Cover with sour cream and cheese. Return to oven 5 minutes or till cheese melts. Serves 6.

I like to cook it like this:

1/4 cup of Claude's Fajita Marinade
1 onion sliced medium to thin slices
Package of Fresh sliced mushrooms
package of Raw Spinach
Grated Monteray Jack cheese

put the marinade in skillet, add onion and let saute about 3 minutes, add the mushrooms and saute a couple of more minutes, then add the spinach and stir till the spinach is all wilted down, then let simmer a few minutes.
Put on plate and top with some grate Monteray Jack cheese.

Makes a good side for Grilled Chicken
